I have a weird work schedule.

Not only do I blog and create recipes but I also help run the office at my family’s security company. So when I’m not in the kitchen testing recipes, cooking up new ideas or photographing recipes, I’m at the office working on stacks of paperwork and programming accounts.  Between those jobs I’m also running around working on other tasks. You can normally find me helping friends with events, working on charity projects and saying yes to every little task that someone needs help with. Haha – To say I’m busy is an understatement at the moment.

Not only am I working two full time jobs but I’m also trying to spend time with family and friends. Sometimes I swear that I’m running on fumes. With everything going on, I still have things to do around the house and making dinner is one of those tasks.

Thighs Bourbon BBQ with Slow Cooker Ranch Potatoes

Thankfully, Thomas will take care of dinner some nights but he also works long hours so I can’t demand that he make dinner every night. Therefore, I’m always looking for ways to save time when I’m making dinner.

When the end of the day is drawing near, sometimes I just don’t have the time or energy to stand in the kitchen for hours making dinner. Some nights I need dinner to be fast but I don’t want to sacrifice flavor!

Thighs Bourbon BBQ with Slow Cooker Ranch Potatoes

This dinner is both delicious and easy!

The slow cooker does the work for the side dish and the main part of this meal heats up in about 30 minutes! What dinner is that? It’s Cooked Perfect Premium Fire Grilled Bourbon BBQ Chicken Thighs with Slow Cooker Ranch Potatoes! We’ve actually made this dinner twice this week because it’s just that good.

Cooked Perfect Fire Grilled Chicken is grilled over an open fire to lock in flavor but all you need to do is heat them in the oven!

Thomas just goes crazy over them. He also loves the fact that there isn’t any breading on them… just lots of great tasting chicken.

We think the Bourbon BBQ flavor is fantastic. The chicken has just the right amount of flavor without it being overpowering.

Thighs Bourbon BBQ with Slow Cooker Ranch Potatoes

For the side dish, these Slow Cooker Ranch Potatoes can cook one of two ways.

You can cook them on low for the entire day, or you can start them at lunch time and cook them on high. Either way, they’ll be perfectly cooked and ready for dinner.

The small red potatoes are perfect, but you can also cut large red potatoes into cubes for this recipe. I just love the way the tiny potatoes look and taste.

About 40 minutes before the potatoes are done, I preheat the oven for the chicken; then with 30 minutes remaining on the timer for the potatoes I pop the Cooked Perfect Bourbon BBQ Thighs into the oven.

So the potatoes cook while I’m at work and the Cooked Perfect Fire Grilled Chicken Thighs are already fully cooked and marinated so all I have to do it heat them up in the oven for about 30 minutes when I get home.

That’s a super quick dinner. Plus, we normally have leftovers, which makes the perfect lunch for the next day!

COOKED PERFECT PREMIUM THIGHS BOURBON BBQ WITH SLOW COOKER RANCH POTATOES

Thighs Bourbon BBQ with Slow Cooker Ranch Potatoes Looking for a new dinner idea for those busy weeknights? Cooked Perfect Premium Fire Grilled Bourbon BBQ Chicken Thighs with Slow Cooker Ranch Potatoes is the dinner for you!

  • Prep Time: 5m
  • Cook Time: 8h
  • Serves: 4

Ingredients

  • 1 tablespoon olive oil
  • 3 pounds tiny red potatoes (or regular sized cubed)
  • 1 tablespoon dry ranch seasoning (1 oz package)
  • 2 cups shredded cheddar cheese
  • 1 cup real bacon bits
  • 1 (24 oz) package of Cooked Perfect Premium Fire Grilled Bourbon BBQ Chicken Thighs
  • Fresh parsley for garnish (optional)

Instructions

  • Add olive oil and red potatoes to the bowl of a slow cooker. Stir to coat potatoes.
  • Add dry ranch seasoning and stir to cover all of the potatoes.
  • Sprinkle cheese onto potatoes. Top with bacon bits.
  • Cover with lid and cook on LOW for 8 hours OR cook on HIGH for 4 hours.
  • With about 30 minutes remaining, Prepare thighs according to the package instructions.
  • Garnish with fresh parsley if desired.
  • Print
