This meal is a great way to prepare salmon because it locks in the flavor while cooking and the parchment paper meals easy clean up after dinner!
What you’ll need to make Easy Mediterranean Seasoned Parchment Paper Salmon:
- salmon
- extra virgin olive oil
- Mediterranean seasoning or Italian seasoning
- lemon
How to pick the best salmon:
I’m no fish excerpt but I try to have an idea of what I’m going for when I’m buying meats and seafood. Here are some things to look for when you’re picking out salmon.
- The SMELL – salmon should not smell like musty ocean beach water. You know that musty gross ocean smell under the fishing pier at the beach…. salmon SHOULD NOT smell like that. If it does, avoid it please. It should just smell fresh.
- salmon should spring back when you lightly press into it. It shouldn’t mush down and keep your fingerprint.
- The Fresh label doesn’t always mean FRESH – it could mean previously frozen and then thawed for market – (this can also give you mushy salmon)
- Flash Frozen means the fish was frozen on the boat immediately after it was caught – I personally prefer this one, although you can’t smell or touch the frozen fish, it is almost always fresher then “fresh fish” unless you’re buying the fish straight from the fisherman.
Ps. did you know that there are different species of salmon? This salmon fillet here on the photos is a Wild Caught Coho Salmon aka Silver salmon. It’s from a company in Alaska and has a bright color flesh and is in the middle of the scale as far as salmon oil content.
Seasoning for Salmon:
This Mediterranean Seasoning Blend is what I’ve been using lately on Salmon and I love it. I found it at Lidl but I’m sure you can find Mediterranean seasoning blends on Amazon and at other grocery stores as well.
If you can’t find a Mediterranean Seasoning Blend, Italian seasoning works great for this recipe as well!
Benefits if cooking salmon in parchment pouch:
When salmon is cooking in a pouch of parchment paper, the salmon cooks by gently steaming. This cooking method keeps the salmon from drying out and helps the salmon become more flavorful as it traps all of the juice and seasonings in the pouch with the salmon.
Preheat oven to 375F.
Lay out a sheet of parchment paper that is large enough to fit the salmon with extra room to fold edges over salmon to create a pouch.
Place salmon on the paper on a baking sheet.
Brush with olive oil and sprinkle with seasoning.
Lay lemon slice over top of salmon.
Fold the parchment paper over the salmon and crinkle to seal to form a pouch.
Bake for 15-20 minutes
Let salmon rest for 3-5 minutes.
