Easy Baked Teriyaki Salmon and Vegetable Sheet Pan Meal – the perfect healthy weeknight meal! This entire dinner is ready in 30 minutes!

Easy Baked Salmon and Vegetable Sheet Pan Meal

I was a super bad blogger this past week. Ok, well I mean I did a lot of of blog work and recipe testing this week but I haven’t posted anything since last FRIDAY! Ahh, I know! I’m sorry.

Not only have I failed to post anything since last Friday I also forgot about my blog’s anniversary and my dog’s birthday until this morning! These were both celebrations that I completely forgot about.

Yes we celebrate our dog’s birthday, heck we don’t have kids yet at least me celebrate my pup’s birthday. hahaha As for the blog’s anniversary, I’m also excited to celebrate that because it has been such a great part of my life over the past years.

So today my Bella turns 9 and BigBearsWife.com turns 8 years old!

We’ll be having vanilla ice cream and apple pie later tonight to celebrate Bella’s birthday and Thomas picked up take out for dinner tonight. Yep, I’m celebrating my 8th recipe blogging anniversary with take out and I’m totally ok with that.

Now does Thomas know it’s my blog’s anniversary? Heck no. Well probably not. He’s awful with dates but I’m just going to pretend that he remembered and that’s why he’s buying dinner tonight. 😉

Even though we’re eating take out tonight (which will include some Teriyaki chicken and veggies!) I still want to share this Easy Baked Teriyaki Salmon and Vegetable Sheet Pan Meal with y’all!

Some people may totally be against the sheet pan meal “fad” but I love it. It’s one dish to bake on and one dish to clean up after dinner. That’s my kind cooking!

Don’t like Salmon? No Problem! Just switch out the salmon for chicken tenders! You might need to cook it just a bit longer for chicken though! Tip: Flatten the chicken before cooking for faster cook time!)

Easy Baked Salmon and Vegetable Sheet Pan Meal Easy Baked Teriyaki Salmon and Vegetable Sheet Pan Meal - the perfect healthy weeknight meal! This entire dinner is ready in 30 minutes!

  • Prep Time: 10m
  • Cook Time: 20m
  • Total Time: 30m
  • Serves: 4

Ingredients

  • 4 small salmon fillets, fresh or frozen that have been thawed
  • 1 bag of steamable brussel sprouts
  • 1 bunch of thin asparagus
  • 1 -2 cups fresh green beans, ends snapped
  • 6 -8 tablespoons garlic olive oil
  • 1 lemon
  • 2 -4 tablespoons seasoning
  • 1/3 cup - 1/4 cup Teriyaki sauce

Instructions

  • Preheat oven to 400F.
  • For the Brussels sprouts - I started finding these steamble bags of fresh Brussels sprouts in the produce section of my grocery store and I love them.
  • Just open the bag, sprinkle in about 2 tablespoons of olive oil and some of the seasoning. Close the bag and microwave for about 4 minutes. (Follow the bag directions).
  • If you can\'t find the fresh Brussels sprout in the steamable bag, you can steam the Brussels sprouts on the stove top or in the microwave until soft before moving onto the next step.
  • (I think you can also find frozen steamable bag of Brussels sprouts in the frozen section as well)
  • On a rimmed sheet pan, lay salmon down the middle of he pan, skin side down.
  • Snap thick fiber ends from the asparagus and lay raw asparagus tip in a single layer on one side of the salmon.
  • On the other side, place the raw green beans in one corner and the Brussels sprouts above them on the sheet pan.
  • Bake at 400F for 20-25 minutes or until salmon is done.
  • Remove from oven and drizzle with Teriyaki sauce.

Meet Angie

I love the Farmer’s Market and Farm to Table meals but I’m also not ashamed to use canned vegetables and baking mixes. It’s all about balance! I’m so glad y’all are here!
