Frozen Chocolate Covered Banana Bites

Have you ever had a love hate relationship with where you live? I do. I love the small town feel of our city and the little downtown warehouse loft apartment that we call home. I’m also pretty happy with the fact that we live about 5 minutes from my parents and about 15-20 minutes from my in laws, we can pretty much see family whenever we want.

But I also long to live somewhere like Wilmington, where there is more to do, more to see and better places to shop. Don’t get me wrong, we have some cute little shops here but I want more of a variety.

I want to be able to shop at little butcher markets and Trader Joes in the same day without having to drive two hours to do so. It would be great if I could swing into World Market after work and pick up something from Whole Foods for dinner one Sunday afternoon without spending time on the interstate to make it happen.

I have no desire to live in a giant city like Chicago or New York, I don’t think those would be style, but I’d love something a bit more that what we have here.

So what does that have to do with Frozen Chocolate Covered Banana Bites? Well the fact that I have a box of Frozen Chocolate Covered Banana Bites in the freezer from Trader Joes that’s almost empty meant that I either needed to drive to Chapel Hill to restock or I needed to make my own treats at home.

I guess you can assume that I didn’t get in the car and drive an hour for chocolate covered bananas. haha

I normally try to get to Raleigh or Chapel Hill about once a month to restock on some of my favorite things from Trader Joes and Whole Foods but sometimes I go a bit longer than that. It really just depends on my schedule.

Our last trip was in December for Christmas shopping, so I made sure to swing into a few shops Trader Joes and World Market to stock up on some of my beloved pantry items like, Coconut Syrup, Cookie Butter, Banana Chocolate Spread and of course Frozen Chocolate Covered Banana Bites.

But like I said, my stash of Banana Bites is growing low and I thought I’d give them a go at home.

I found out from making my “Vampire Magic Shell” back in October for Halloween that Coconut oil and chocolate melted together would harden almost instantly when introduced to something cold from the freezer, so that’s where I started.

I just melted some chocolate chips together with a little coconut oil and then dipped frozen banana slices into the melted chocolate mixture. A few minutes later I had a tray of frozen chocolate banana treats without the trip to Raleigh!

Perfect!

Frozen Chocolate Covered Banana Bites

Gone Bananas - Trader Joe Copy Cat - Frozen Chocolate Covered Bananas Love the Gone Bananas Chocolate Covered Bananas from Trader Joe? I do but I can't drive 2 hours to the store every time I get a craving for them! Homemade Frozen Chocolate Covered Banana Bites are so easy to make at home!

  • Cook Time: 2m
  • Total Time: 30m
  • Yield: about 32 pieces

Ingredients

  • 4 bananas, firm but not green
  • 12 ounces chocolate chips (milk, dark or semi-sweet)
  • 1 tablespoon coconut oil

Instructions

  • Slice Bananas into 1 inch coins.
  • Lay banana coins on a sheet pan lined with parchment paper and place them into the freezer for 15 minutes.
  • When the 15 minutes are up, leave the bananas in the freezer while you work on the chocolate.
  • Pour the chocolate chips into a medium glass bowl.
  • Add the coconut oil and stir.
  • Place bowl into the microwave for 2 minutes, stirring after every thirty seconds.
  • Keep heating and stirring until chocolate is melted and smooth.
  • Working quickly, remove bananas from the freezer and dip them one by one into the chocolate and then place them onto the parchment paper.
  • The chocolate should harden around the bananas in just a minute or so.
  • Keep banana bites in an air-tight container in the freezer!

    I totally know the feeling of living in a small town and wanting it to be just a little bigger. 😉 That said, as someone who lives in a really big city now, I miss the smaller town quaintness, even if I have everything at my fingertips. So the grass is always greener.

    I can’t eat bananas, but I know my daughter and husband would LOVE these! And I think I’ll plan on making them some because how could I resist?

      For a while. I’m not sure exactly how long because I’ve never left them in the freezer for more than a few weeks but I know I’ve had some in the freezer for about a month before and they were still great. Just make sure you keep them in the freezer and keep them in an airtight container or bag.

    Can you substitute reg oil for coconut oil?

      Nope. The coconut oil is what makes the chocolate harden into the cold bananas and create the chocolate shell
