It’s ok for us to fall off of the Clean Eating/Healthy Eating wagon sometimes right? We haven’t really been sticking to the clean eating thing 100% since October but I am happy with the choices we’ve been making when it comes to food. Sure I still have my sweet tooth and my “oops” moments of weakness but I love the change that I see in my attitude towards “good and bad” foods!

Before, I would just eat; I’d eat whatever tasted good and that was all that matted. Now I’m all about “how can I make this better for me but still taste amazing?!” Do I still eat ice cream and have chocolate….. um… yes. Of course I do. But I find myself wanting less and less of it.

When I was asked to work with Dreamfields to celebrate National Nutrition Month with #HealthyPastaMonth, I wanted to come up with a tasty pasta dish that wouldn’t be weighed down with a heavy cream sauce. I admit that a thick Alfredo with tons of cheese is normally my go to pasta dish! That however is not what I had in mind for this recipe! I needed something light but packed with flavor!  I wanted to incorporate lots of bold flavors like the ones in my Hawaiian Curry; I wanted a pasta dish that would make me feel good!

One of my favorite recipes that’s packed with flavor but also packed with veggies is the Hawaiian Green curry I made a while back. The flavor is amazing and it’s something that Big Bear and I both love. It’s easy to make and doesn’t take very long! (Both great reasons to love this recipe in my book!) So I HAD to turn that into a fantastic pasta dish! I love it!

This Green Curry Pineapple Rotini is packed with vegetables and sweet chunks of pineapple with a slight kick of heat from the curry! It’s got about 310 calories per serving and it’s high in protein and fiber!

Green Curry Pineapple Rotini

Ingredients 

1 box Dreamfields Rotini pasta
1 can un-drained pineapple chunks
3 carrots, peeled and chopped
1 (13 fl  oz) can unsweetened coconut milk (or low fat coconut milk)
2 cups chopped broccoli
1 tablespoons garlic paste
1 teaspoon lemon grass paste OR 2 pieces fresh lemon grass
2 tablespoons green curry paste
2 tablespoons of cornstarch or arrowroot to thicken the sauce (optional)
* if you use the whole lemon grass don’t eat this! Just use it for flavor, remove before eating

Instructions

Cook the Dreamfields Rotini according to the package directions. Once the pasta is cooked to al dente, drain and set aside.
In a large pot, heat the pineapple juice. Add the carrots and cook until tender.
Depending on the thickness of the carrots this could take anywhere from 5-10 minutes.
Once carrots are tender, add in the chopped broccoli and cook for 2-3 minutes.
Add in the pineapple chunks, stir and cook for about 2 minutes.
Add in garlic paste and lemon grass. Stir well.
Add in the coconut milk and stir to combine.
Simmer on medium heat for 10 minutes.
Stir in green curry pasta. Bring sauce to a boil and then reduce to a simmer. Cook for 10 minutes.
If you want the sauce to be thicker add in 1-2 tablespoons of cornstarch or arrowroot and stir, this sauce will thicken after it cools too.
Once the sauce it done, toss it with the pasta and serve immediately.
Yields: 6 servings

15 g total fat; 12 g saturated fat; 0 mg cholesterol; 244 mg sodium; 9 g total dietary fiber.

**For the best taste and texture experience, pasta should be eaten in one sitting. If you do have leftovers Dreamfields suggest storing for only one to two days in an airtight container and keeping the pasta separate from the sauce.
