My friend Anne has been a great support for me in my search for healthy foods and recipes. Anne lives in Hawaii now and is always cooking with fresh ingredients! Not to mention the Hawaiian/Asian style of the islands influences her food a great deal so she’s always cranking out some serious flavor! This Hawaiian Style Green Curry Chicken is one of those recipes that Anne gave me!
I’m sure it’s no surprise that I’m a big chicken eater. I could literally eat chicken every day and not be tired of it. But even though I can eat chicken everyday, I do need to change up the chicken recipe now and then. As in I can’t just eat a grilled chicken breast everyday and be ok with that. I need flavor! However I actually find it difficult to find chicken recipes that aren’t covered in sauce or in fat. Until I got some help from Anne that is!
Ingredients For Hawaiian Style Green Curry Chicken:
- boneless skinless Chicken Breast, cubed
- green curry paste
- red pepper flakes
- garlic powder
- fresh lemon grass
- mushrooms
- unsweetened coconut milk
- sugar snap peas
- carrots
- un-drained pineapple chunks
- yellow saffron rice

What Is Green Curry Paste Made Of?
According to Wikipedia,
“Green curry paste is traditionally made by pounding in a mortar green chillies, shallots, garlic, galangal, lemongrass, kaffir lime leaves, cilantro roots (coriander), and cumin seeds, white peppercorns, shrimp paste and salt.”
How To Make Hawaiian Style Green Curry Chicken:

We’re going to be using the pineapple to cook the carrots.

You’re going to need a large pot. Heat on medium high heat, about 1/4 cup of the pineapple juice and then add the carrots strips and sauté until tender.

Add in the chicken and cook until chicken is almost done.

Add in the snap peas, mushrooms, pineapple chunks with juice and lemongrass. Stir.

Pour in the coconut milk into the veggies and stir it up.

Simmer for about 5 minutes or until the chicken is done.

Add in the curry paste, garlic and red pepper flakes. Green curry paste is hot so adjust to your taste. 1-2 tablespoons is about all we need here. ( We love the Thai Kitchen thai green curry paste)

Stir to combine. Simmer for about 5-10 minutes.

Serve over cooked saffron rice.

Anne was so gracious in telling how she makes her Hawaiian Style Green Curry Chicken at home. I only tweaked it a tiny bit, and wow, just “wow” is really what I have to say about this recipe! It’s so flavorful and it isn’t packed full of butter or fat! It is just the kind of recipe that I need! This Hawaiian Style Green Curry Chicken comes together in about 30 minutes as well, so while I’ve enjoyed it on the weekend, it’s just as quick to whip up after work!

Hawaiian Style Green Curry Chicken
Hawaiian Style Green Curry Chicken
This delicious Hawaiian Style Green Curry Chicken is a healthy chicken recipe that's inspired by the beautiful Hawaiian islands.
Ingredients
- 4 boneless skinless Chicken Breast, cubed
- 1 -2 tablespoons green curry paste*
- 1 teaspoon red pepper flakes
- 2 teaspoons garlic powder
- 2 pieces of fresh lemon grass**
- 1 cup mushrooms slices
- 1 can unsweetened coconut milk
- 2 cups sugar snap peas
- 3 carrots, sliced
- 1 can un-drained pineapple chunks
- 1 bag yellow saffron rice, prepared according to package directions
Instructions
- In a large pot, heat about 1/4 cup of the pineapple juice. Add the carrots and saute until tender.
- Add in the chicken and cook until chicken is almost done. Add in the snap peas, mushrooms, pineapple with juice and lemon grass. Stir.
- Pour in the coconut milk. Stir to combine. Simmer for about 5 minutes or until the chicken is done.
- Add in the curry paste, garlic and red pepper flakes. Stir to combine. Simmer for about 5-10 minutes.
- Remove Lemon Grass.
- Spoon over prepared saffron rice.
Notes
*green curry paste is hot so adjust to your taste
** do not eat the lemon grass, this is just for flavor.
