I put a spell on you and now your mine…. with Winifred Sanderson’s spell book from Hocus Pocus that’s been turned into cream cheese sugar cookie sandwiches. Hocus Pocus spell book cookie sandwiches will put a spell on your party guests this year.

Hocus Pocus Spellbook Cookie Sandwiches

It’s October 3rd and I’ve already watched Hocus Pocus twice this month. If you haven’t seen it, you’re missing out on one wickedly awesome Halloween movie that’s not scary. I’m not big on scary, creepy movies, y’all. They give me nightmares, like super bad nightmares so I stick to the non-terrifying Halloween type movies.

So in the spirit of awesome Halloween movies and #HalloweenTreatsWeek, I made Hocus Pocus Spell book Cookie Sandwiches for y’all.  They’re easy, no fancy skills are really needed and they’re based off  Winifred Sanderson’s spell book from Hocus Pocus!

I turned these into cookie sandwiches but don’t have to make them into little sandwiches. You can just leave them plain if you want to. I think they’re perfect either way.

The candy eyes are from Wilton and they’re the perfect size for these spell book cookies. Oh and the edible marker, it makes decorating these cookies super easy.

Also, talk about a tasty cookie! These are made with a new cream cheese sugar cookie recipe that I’ve been using for the past year and they’re by far the best sugar cookies I’ve ever made or tasted.

    Hocus Pocus Spellbook Cookie Sandwiches

    Hocus Pocus Spellbook Cookie Sandwiches Recipe

    I put a spell on you and now your mine.... with Winifred Sanderson's spell book from Hocus Pocus that's been turned into cream cheese sugar cookie sandwiches. 

    • Yield: 36 Cookies ( 18 Sandwiches)

    Ingredients

    For Cookies:

    • 8 ounces cream cheese, room temperature
    • 4 sticks butter (2 cups), room temperature
    • 2 cups white sugar
    • 2 egg yolks
    • 2 teaspoons vanilla
    • 1/2 teaspoon salt
    • 5 1/4 cups flour

    For Icing

    • 6 ounces warm water
    • 5 tablespoons meringue powder
    • 1 teaspoon cream of tartar
    • 2 pounds of powdered sugar
    • Brown Food Coloring
    • Cocoa Powder (Optional)

    Decorating:

    • Candy Eyes
    • Piping Bags
    • Black Edible Marker

    Filling Ideas:

    • Chocolate Ganache
    • White ButterCream
    • Chocolate Frosting

    Instructions

    For Cookies:

    • In the bowl of a stand mixer fitted with a paddle attachment, cream together cream cheese and butter.
    • Mix in sugar until light and fluffy.
    • Add egg yolks one at a time and then add the vanilla. Mix well.
    • In a large bowl mix the dry ingredients and add a little at a time to butter mixture.
    • Mix until flour is completely incorporated and the dough comes together. If it seems to not be coming together all the way in the bowl, dump it out onto a flat surface and knead until the dough comes together.
    • Wrap in plastic wrap and chill for 1 to 2 hours.
    • Roll cookies out to about 1/4 inch thickness (thicker or thinner depending on your preference)
    • Cut out squares.
    • Bake on un-greased baking sheet at 350 degrees for 10-12 minutes.
    • Lay them on a wire rack to cool

    For Icing:

    • In the bowl of a stand mixer, combine the warm water and the meringue powder. Mix for about 30 seconds or until frothy.
    • Add in the cream of tartar and mix for 30 seconds more.
    • Pour in all the powdered sugar.
    • Using the paddle attachment on the LOWEST speed, mix slowly for a full 10 minutes.
    • Icing will get thick and creamy.
    • Tint Icing brown. You might need a lot of brown or you can add a touch of cocoa powder to make it as brown as you like. Don\'t add a lot though because it\'ll make the icing too dry.
    • Fill a piping bag with brown icing. Snip the end and and cover cookie squares with icing.
    • Add a candy eye to 1/2 of the spell book cookies and pipe a circle around the candy eye for an eye lid.
    • Let cookies dry completely .

    To Decorate

    • Using an edible black marker, draw stitches on the cookies with the eyes.
    • Using the Eyeball Cookies as the tops and the plain brown cookies as the bottoms, match them up to create sandwiches.
    • Fill each cookie sandwich with your choice of filling.
    • Print
