When I first started teaching myself to cook, I used a lot of cream of mushrooms soup and cream of chicken soup mixes to make casseroles. It’s a staple in a lot of southern cooking and now we have a homemade version of cream of mushroom soup to use in those awesome recipes.

- 4 tablespoons butter
- 8 ounces mushrooms, diced
- 1/4 cup flour
- 1 cup chicken broth
- 1 1/2 cup half and half
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/3 teaspoon pepper

How to Make Condensed Cream of Mushroom Soup from scratch:

Put mushrooms into a food processor OR chop

Dice mushrooms into very small pieces by hand or food processor.

Melt Butter in medium skillet over medium heat.

Sauté the mushrooms Until most of the water has evaporated.

Mix in the flour until incorporated

Add the broth and spices. Mix well.

Bring to a boil.

Drop the heat to low and whisk in the half and half allow it to thicken for 3 minutes

Remove and let cool.

This will continue to thicken as it cools.
