Burrito bowls are one of my favorite meals to order from Chipotle! I use to love to order the burritos but I just couldn’t finish those because they were massive.
My perfect Chipotle burrito bowl order:
- Chicken
- Tomatillo-Red Chili Salsa
- Sour Cream
- Cheese
- White Rice (Cilantro Lime Rice)
- Black Beans (½)
- Pinto Beans (½)
As you know, we love making restaurant food at home! So we’re adding this cilantro lime rice to our recipe copycat recipe box! Having this rice recipe makes it easy to make my own DIY Chipotle Burrito bowls at home.

QUICK GLANCE AT INGREDIENTS for Homemade Cilantro Lime Rice:
- Fresh cilantro (about 10 sprigs)
- 2 cups parboiled rice
- 2 cups of water
- 2 limes
- 1 tablespoon of garlic powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
I’ve show the ingredients above that you’ll need but you’ll also need a few items from the kitchen to make this recipe:
How to Make Instant Pot Cilantro Lime Rice:

Take 5-7 sprigs of cilantro. Fold them into themselves to make a clump and chop finely. (Stems and leaves)

Add the rice, water, two wedges of lime, 2 tablespoons of chopped cilantro, spices, and water** to the instant pot. Stir ingredients.

Seal the lid and pressure valve. Cook at the rice setting or on high for 12 minutes.
Quick release. -
Squeeze the juice from the remaining lime and fluff the rice with a fork.
Frequently Asked Questions
Parboiled and Instant Rice are similar but they are NOT the same. Parboiled rice is rice that has been partially cooked and then packaged up for sale. Instant Rice is completely cooked and then dehydrated before being packaged up for sale.
You can find parboiled rice at almost any grocery store in the rice section. Just look for “parboiled” on the package.
Parboiled rice is used in this recipe to make sure that this recipe is super quick and easy to make.
I haven’t tried this recipe with either so I’m not positive on the outcome.

Ingredients

Just a quick question about the Cilantro Lime Rice and The Instapot. .
I have a slow cooker and I have a whole bunch of pots. But unfortunately none of the have the capability of being instant.
Does it really matter what kind of pot it is cooked it? I don’t mean to sound mean or anything, but for those out there that might be wondering . . .
We consume a lot of rice, Asian and Mexican dishes, and I make sushi once a week. So for me it is not a problem. But I have come across this question on every recipe site that I pass over.
You are a beautiful woman and an awesome cook and those with the
Instapot question would rather hear from you that “yes, you can still make this rice with a regular old pot”, than from some online kook like me.

Hey! You can certainly make this rice without an instant pot! I haven’t made this particular rice without using the instant pot only because I was working on adding more Instant Pot recipes for the blog. If I were going to make this Cilantro rice on on the stove, I would do it something like this:
Fresh cilantro leaves only (about 10 sprigs), finely chopped
2 cups long grain white rice
4 cups of water
2 limes
1 tablespoon of garlic powder
1/2 teaspoon of salt
1/2 teaspoon of pepper
Rinse rice until water runs clear.
In a large skillet, melt butter and add rice to skillet.
Stir and cook rice until toasty and lightly golden, about 10 minutes.
While rice is toasting, whisk water, zest and juice from one lime, garlic powder, salt and pepper.
When rice is toasted, add water mixture.
Bring to a boil and stir well.
Reduce to a simmer and cook for 25-30 minutes*, covered, until water is absorbed.
Fluff with a fork, taste for seasoning. Add juice from 2nd lime if needed and stir in chopped cilantro.
