Samoa cookies are one of my best friend’s favorites! So you know I had to give her a call when I made these Homemade Samoa Cupcakes so that she could some get some!
They’re pretty easy to make and have all of the same flavor layers as those tasty Samoa cookies!
Ingredients For Homemade Samoa Cupcakes:
- white sugar
- all-purpose flour
- baking soda
- salt
- unsweetened cocoa powder
- eggs
- milk
- vegetable oil
- vanilla extract
- boiling water

How To Make Homemade Samoa Cupcakes:

Preheat oven to 325ºF.

Follow cupcake batter recipe below and mix until smooth.
Place cupcake liners into cupcake tray and fill liners halfway with batter. -
Bake in preheated oven at 325F for 30 minutes or until done. Let cool before frosting.

Once Caramel Frosting has been made, pipe a swirl of frosting onto each cupcake. Drizzle with chocolate syrup.

Sprinkle with toasted coconut and top with a Samoa cookie that has been broken in half.
What Flavor Is Samoa?
Samoa cookies are crispy cookies with caramel, toasted coconut, and dark chocolate stripes.
What If I Can’t Find The Girl Scout Samoa Cookies?
No problem! There are a few other brands you can use that taste the same. How Do I Toast Shredded Coconut?
To toast shredded coconut, place shredded coconut in a skillet on the stove top and set the heat to medium. Heat and toss coconut until toasty and brown. Don’t look away though because it can quickly go from toasted to burnt.

Samoa Cupcakes
Turn your favorite Samoa cookie Girl Scout cookies into a homemade treat with these Samoa Cupcakes! These chocolate cupcakes have a caramel frosting and are topped with chocolate, toasted coconut and Samoa Cookies!
Ingredients
For Cupcakes:
- 2 cups white sugar
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3/4 cup unsweetened cocoa powder
- 2 large eggs
- 1 cup milk
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup boiling water
For Frosting:
- 1/2 cup unsalted butter, room temperature
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons caramel sauce
- 6 tablespoons milk
Topping:
- 1/2 cup shredded coconut, toasted
- 12 Samoa cookies, broken in half
- 3 teaspoons chocolate syrup
Instructions
Preheat oven to 325ºF.
Whisk together sugar, flour, baking soda, salt and cocoa powder.
Next add in eggs, milk and oil. Mix well. Stir in vanilla. Carefully mix in boiling water.
Place cupcake liners into cupcake tray and fill liners halfway with batter.
Bake in preheated oven at 325F for 30 minutes or until done.
Let cool.
To make frosting, use an electric mixer to whip butter until smooth.
Mix in vanilla, caramel and milk.
Mix in powdered sugar, whip until light and fluffy.
Pipe frosting onto each cupcake. Drizzle cupcake with chocolate syrup, sprinkle with toasted coconut and garnish with 1/2 Samoa cookie.
