What is Hummingbird Cake?
The best way to describe a hummingbird cake is to say that it is kind of like a spice cake loaded with pineapples, bananas and pecans. Plus it’s normally always topped with cream cheese icing!
How do I make pineapple flowers for the hummingbird cupcakes?
Pineapple flowers are actually pretty easy to make. They just take little time and patience. I recommend making them about a day or two in advance if you want to decorate your hummingbird cupcakes with pineapple flowers.
In the link below (going to Dixie Crystal’s site for the recipe) I have the full directions for these homemade pineapple flowers but here is a qucik run down:
- Thinly slice pineapples
- Dry pineapple slices
- Bake for 2-3 hours
- Use a muffin pan to shape them
Do I have to use pecans?
You don’t have to add pecans to the cupcakes or the topping if you don’t want to. Traditionally there are pecans in hummingbird cake BUT if I had to choose between leaving them out or not making it, those pecans would be gone. haha
I’d sacrifice pecans to enjoy hummingbird cake.
