This is one super easy dinner recipe that I love to make because it doesn’t take a lot of prep work and it is made in the Instant Pot which means I don’t have to babysit it while it’s cooking. With a super busy toddler running around, I don’t always have the luxury of casually making dinner haha
What you’ll need to make Instant Pot Pulled Pork & Potatoes:
- Boston Butt
- your favorite grilling seasoning
- beef broth
- Yukon gold potatoes, quartered
What kind of seasoning should I use for pulled pork?
The seasoning that we use on our pork at home is an espresso based rub using garlic powder and onion powders, sea salt and course ground black pepper, cumin chili powder and ground mustard. It’s a homemade seasoning that Thomas puts together and I’ll try to get the recipe for it onto the blog soon for y’all.
However, you could use any type of grilling seasoning would work plus there are some spice shops that sell espresso rubs already made. 🙂 I know McCormick makes some general seasoning mixes too that would probably work nicely.
Making Instant Pot Pulled Pork and Potatoes:
First, season both sides of pork. Turn instant pot sear/sauté button on to high.
Sear both sides of pork for 2-3 minutes.
Remove pork and turn Instant Pot off.
While Instant pot is still hot, pour in broth and use a wooden spoon or spatula to scrape up the brown bits of flavor.
Add pork back into Instant Pot.
High pressure for 45 minutes. Please be careful.
Release pressure and when ready, remove pork. Let rest under foil.
Lay potatoes in Instant Pot (with juices from pork) & cook on high pressure 10 minutes.
Release pressure when done.
Serve together and dinner is done!
