When I first did keto last year (or maybe it was the year before), silly me thought that popcorn would be a great keto snack. Well, it’s an ok low carb snack but it’s not a full on keto snack which is sad because we kind of love popcorn. Well, I like popcorn…my husband and son LOVE it.
Now I’m not full time keto over here, but my body does respond well to keto and super low carb foods, so when I saw this on being made on TikTok, I knew that I wanted to try it.
I originally saw it on @keto.maam on TikTok. If you follow her on TikTok you’ll recognize her by her opening line of “Keto Crap coming atcha, you no likey, swipey swipey!”
What you’ll need to make Keto Cheese “Popcorn”:
- block cheese, cheddar or colby jack
- parchment paper
- paper towels
- baking sheet
- popcorn seasoning (optional)
- oven
What is Keto Popcorn or Puffed Cheese Popcorn?
It’s cheese. It’s just puffed cheese.
Keto Cheese Popcorn is cheese that has set out to dry /harden and then popped in a preheated oven to resemble popcorn.
So he’s how to make Keto Popcorn or Puffed Cheese cubes:
First, this popcorn need to be made with a hard cheese, like a block of hard cheese like cheddar or colby jack.
Chop the block of cheese into small bite sized cubes.
Spread cheese cubes onto a baking sheet lined with parchment paper. Lay them in a single layer and don’t let them touch one another.
Cover the cheese cubes with a paper towel and let the cheese sit out at room temperature for 48 hours to dry out and harden
I had to add a note to mine to keep snacking hands away!
When ready to pop, preheat oven to 390F.
Use paper towel to blot away any moisture that has gathered on the cheese and toss away paper towel.
Bake cheese cubes for 3-4 minutes, they will start to puff up.
Remove from oven and sprinkle with salt or popcorn seasoning while hot.
Let cool slightly and enjoy!
I was skeptical the first time I made this. I thought that there was no way that dry puffy cheese was going to be a snack that I wanted to eat.
However, it’s actually pretty good and our 2 year old LOVED it. It’s a bit chewy compared to real popcorn but it’s good. I would suggest making more than you thank you want because you may find that when you reach the bottom of the bowl that you wish you has more.
My 2 year old wanted more and he didn’t quite understand that this “popcorn” takes 48 hours to dry hahaha.
We added this white cheddar popcorn seasoning which is probably not keto and but it’s our favorite for regular popcorn so we thought we’d try it out on the cheese popcorn and it was wonderful.
