One of the things that I really love about our new house is that fact that I have space for deep freezer again. Which means that I am once again free to buy meat and seafood in bulk when it goes on sale. It also means that I’ve got stock piles of frozen vegetables now and I love it. 

Chicken and cauliflower rice are in abundance on my freezer shelves so the other night when I was looking for dinner ideas, I stumbled across a Cheesy Chicken Broccoli Rice Skillet from the blog, “The Girl That Ate Everything”.  I’m all about cheesy chicken dishes so I knew this was what I wanted to make for dinner.

As much as I absolutely love rice, it doesn’t always love me and I try to substitute cauliflower ice for regular white rice when I can. So I changed up the recipe just a bit and made this cheesy chicken skillet a delicious low carb dinner that all three if us loved!

I don’t always make low carb dinners but oh I just feel so much better when I eat low carb. I love carbs but they don’t always make me feel the best.

This dinner though, it tasted great and I felt good after I ate! That makes this a WIN WIN in my book.

Low Carb Cheesy Chicken Broccoli Rice Skillet Recipe

Low Carb Chicken Broccoli Rice Skillet

  • Prep Time: 5m
  • Cook Time: 30m
  • Total Time: 35m
  • Yield: 4 servings

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 1/2 pounds boneless skinless chicken thighs , cut into small bite sized pieces
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 12 ounces riced cauliflower, cooked/steamed
  • 1/2 cup chicken broth
  • 2 cups broccoli florets , chopped into bite sized pieces
  • 3 cups shredded sharp cheddar cheese

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add chicken to skillet, season with garlic powder and onion powder. Cook chicken, stirring occasionally until brown and done, about 10-15 minutes.
  • Pour in the cooked cauliflower rice, broccoli and chicken broth into pan. Add black pepper and stir well.
  • Simmer on low heat for 5-10 minutes or until broccoli is tender.
  • Stir in 2 cups cheese. Sprinkle 1 cup cheese on top.
  • Cover and simmer for 3-6 minutes or until cheese is melted.

    This recipe may be low in carbs, but if you’re trying to loose weight (or maintain your weight) cutting down on carbs isn’t the only factor to consider. Surprise, surprise, ….your intake of calories & fat also matter! This is a recipe for 4 people, and it calls for 3 cups of cheese. That means that each individual will consume 3/4 of a cup of cheese! Is that healthy, no! Is it fattening, yes! I’ve been eating low carb since I was in my 20s. I lost 63 lbs., and maintain my svelte figure. I eat a very limited amount of fat, and I also found that you have to watch your calorie intake, as well. Cutting carbs (alone) is not a magic wand. I’ve know friends who have actually gained weight on a low carb diet, because they were consuming a lot of fat. Do research ahead of time, before going on a low carb regimen.

      Didn’t claim that this was a healthy meal. I said it was low carb and it is. Also, my body feels and works 1000 times better when I cut out carbs like bread, white rice and potatoes. I didn’t post this recipe to make people loose weight. I also have cookie recipes on my site….also not healthy but no one is going to those to loose weight either. I have done research on low carb and low carb works for me. Yes people that want to loose weight need to watch their calories but I didn’t post this as a recipe to help people loose weight.

        People can always change the recipe to their liking and dietary needs. I think the recipe is great just the way it is. I too need to watch my carbs or I feel sluggish. I’m not on a diet & not concerned about the fat content. You can always lessen the amount of cheese or use fat free cheese. It was yummy.

    Have you made this with frozen riced cauliflower? I have made this recipe using fresh cooked cauliflower before but would love to skip that step on busy school/work nights. Also, I make a little bit of rice for my kiddos and place theirs in separate ramekins. Voila! The do not notice the cauliflower due to the rice.

      Oh yeah! The frozen is the only kind I use haha. Just cook it/steam it before adding it 🙂
