But first before we get into those giveaways let me pull you back to the table and share these Mahi Mahi Tacos with you.

I had my first fish taco in Roanoke about a year or so ago. I didn’t think that I was going to like it, but I did. I was surprised. I have no idea why I even ordered it considering I’m not really a big fish eater, but as fate would have it I decide to order it and loved it. Fast forward to this year, I had Mahi Mahi for the first time at Steaks on a Square.

Again it must have been the “foodie” in me coming out because I don’t know why I ordered it, but I did and I loved it. It came with a mango salsa that really took it over the top.

So the other night I got this idea. Mango and Watermelon Salsa Mahi Mahi Tacos! (an idea that after googling has obviously already been thought of 1000 times, sorry)

It’s my combination of wanting to make fish tacos, that wonderful mango mahi mahi and fresh watermelon that is such a icon of summer!

These are really simple but so refreshing. Now I really didn’t think that BigBear would like these, but I was surprised when he actually really, really liked them! He said I must have Hawaii on the brain because it reminded him of Hawaii haha.

What you’ll need:

For Mango Watermelon Salsa
1/2 cup diced mango
1/2 cup diced watermelon
1/2 teaspoon sugar
Juice from 1/2 lime
pinch of salt
1 teaspoon Gourmet Garden Cilantro Paste
For Mahi Mahi
1-2 tablespoons butter (or coconut oil)
3 Mahi Mahi fillets
2-3 tablespoon Gourmet Garden Cilantro Paste
Juice from 1 lime

Small tortillas 
What to do:
For Mango Watermelon Salsa

Add mango and watermelon to a large bowl. Mix in lime juice and Gourmet Garden Cilantro Paste. 
Add in sugar and salt. Mix well. Set aside.

For Mahi Mahi

Heat a skillet to medium heat. Melt butter. 

Sprinkle Mahi Mahi fillets with lime juice and lightly smear with Gourmet Garden Cilantro Paste.
Place Mahi Mahi fillets into the hot skillet. Cook 4-5 minutes. 
Flip and cook for about 4 minutes or until done. Mahi Mahi fillets should be white and flaky! 
Remove from skillet and shred with two forks. 

Pile Mahi Mahi into tortilla, top with Mango Watermelon Salsa!

Ingredients 

For Mango Watermelon Salsa
1/2 cup diced mango

For Mahi Mahi
