Red Potato Nachos

A big Howdy, Hello and Hi from Black Gold Farms! That’s exactly where I am right now. Depending on when you’re reading this that is. hee hee.

I’m in Missouri at the Black Gold Farms with Heidi, Sandy and our winners from the Black Gold Farms tour giveaway! I love it when I can see exactly where my food comes from and that’s exactly what we’re getting to do today. We’re taking a tour of one of the Black Gold Farms, meeting the family that runs it and seeing exactly what all goes into potato farming!

Since Black Gold Farms is all about Red Potatoes, I just knew that I had to share these Red Potato Nachos with you while I’m out at the Farm! They’re perfect as an appetizer to share or heck, just enjoy them as your dinner!

Red Potato Nachos

Ingredients 

6-8 Medium Red Potatoes
Salt 
Pepper
Paprika*optional 
Olive Oil
1 can chili
1/2 cup shredded cheddar cheese
1/4 cup diced tomatoes
1/4 cup shredded lettuce
sour cream **optional

Instructions

Pre-heat oven to 450F.

Wash and dry red potatoes. Slice potatoes into 1/4 inch thick slices.

Lay potato slices out onto two baking sheets. Drizzle with olive oil and sprinkle with salt, pepper and paprika.

Bake for 20-25 minutes.

Remove from over. Carefully place hot potatoes onto a plate or in a large bowl.

Top with Chili, lettuce, cheese and diced tomatoes.
