Something’s got me traveling down memory lane this week. I’ve been reminiscing about my college days, the restaurant where I use to wait tables and beach trips that happened almost 10 years ago.

Maybe it’s because this is my last year in my 20’s and within a matter of months I’ll be celebrating the big 3-0. (totally ok with it too)

Or maybe it’s because I keep seeing people post photos onto Facebook from that “Time Hop” App haha and it’s making me miss those days just a little bit. 😉

I’ve made quite a few recipes that were inspired by the food that I loved from my waitress days and we’re just going to continue down my list of favorites!

Nachos!! Manwich Nachos!  They’re another popular appetizer from my restaurant days and not only are they easy to throw together but they’re a total husband pleaser! Don’t get me wrong though, they don’t just have to be an appetizer! 

They’re awesome for lunch or dinner! (BigBear has had them for dinner two nights in a row!) He was totally OK with embracing #ManwichMondays! And I think that sometimes I get wrapped up in trying to create super cute cupcakes or darling desserts and I may forget that BigBear might want something a little more “manly” once in a while haha.

Since I finally convinced BigBear to give Manwich a try a year or so ago, we’ve mostly just been enjoying Manwich when we make Sloppy Joes.

They’re quick and they taste pretty darn good but I was looking for another way to use this flavorful can of Manwich!

That’s where these Manwich Nachos come into play! Their my favorite little spin on traditional nachos and I may never be able to eat normal nachos again!

While I may add cheese, lettuce, diced tomatoes and olives to mine, Big Bear likes to keep his Manwich Nachos simple and stops after he gets to the cheese layer.

My friend Nicole did a little test of my recipe the other night and she said they were fantastic, although I think that they too opted to stop after the cheese layer and just enjoyed the chips, Manwich and melted cheese!

So pretty much eat these how you want to!

Add what you love and leave off what you don’t want. Oh and ps. I used ground beef and hot sausage in these! Make sure to get the ground sausage and not the link sausage. 🙂 It’s amazing with the hot sausage!

So here’s how you make them:

First, brown the beef and sausage over medium-high heat until done. When it’s cooked, drain the grease.

Then, stir in 1 can of Manwich.

Pile Tortilla Chips onto a large platter. (Oven Safe Platter is you want to melt the cheese in the oven)

Pour Manwich over the chips.

Next, add the cheese.

Place platter into oven set to broil in order to melt cheese. Watch carefully as this won’t take long and you don’t want to burn the chips.

Add your favorite nacho toppings and serve!

If you’re going to want to share (which you might not want too haha) you may want to double or triple this recipe.

Serves 2-4                                                                                   

Ingredients 

8 oz ground beef
8 oz hot sausage
1 can Manwich
1/2 bag of Tortilla Chips
2 cups cheese
shredded lettuce (amount depends on preference)
diced tomatoes (amount depends on preference)
black olives (amount depends on preference)
Directions 

Brown the beef and sausage over medium-high heat until done. Drain grease.
