So since I haven’t really mastered the art of making fudge, let’s move onto something I can make! Mini Donuts! Mini Rocky Road Donuts!
These Mini Rocky Road Donuts are quick to make and covered in melty hot fudge sauce, sweet marshmallow cream and crunchy walnuts! If you’re getting ready to make these, there are two ways to make these little bites of heaven!
You can either use an electric donut maker like I did or you can use a mini donut pan and bake these in the oven! I made “mini” donuts but you could also use a large donut pan and make them regular sized as well!
So this weekend, BigBear and I ran out to our local Dollar General store to pick up everything that we needed! I have personally always loved Dollar General but now that we have a Dollar General “Market” with a fresh produce and meat section I’m even more in love!
What you’ll need:
Heat the Hot Fudge Sauce and dip each donut into the Hot Fudge Sauce and then place it back on the cooling rack.
In a sauce pan, combine the mini marshmallows and 4 tablespoons of water. Heat on medium heat and stir until melted. Remove from heat and carefully add melted marshmallows to a piping bag.
Finish them off by sprinkling them with crushed walnuts.
That’s all you have to do for these Mini Rocky Road Donuts!
They’re perfect served warm with a tall glass of cold milk!

Ingredients
1/2 cup brown sugar
1/4 cup vegetable oil (I used Clover Valley Vegetable Oil)
1/2 cup cocoa powder
3/4 cup flour
2 teaspoons baking soda
1/2 teaspoon salt
1/4 cup water
2 cups of mini marshmallows (I used Clover Valley Mini Marshmallows)
+ 4 tablespoons water
1 jar Hot Fudge Sauce
1 cup chopped walnuts
Extra mini marshmallows for garnish
In a large bowl, mix together the brown sugar and eggs. Beat in the oil, cocoa powder, flour, baking soda and salt. Whisk in the water.
I used a mini donut maker for these but you could also use a mini donut pan as well.
For the mini donut maker:
Once the mini donut maker has heated up, fill the donut maker with batter, close the lid and bake for 1 – 1.5 minutes. Don’t bake for too long or the donuts will over bake and be dry.
Remove the donuts from the donut maker and place on a cooling rack.
Place a sheet of wax paper or foil under the cooling rack.
Heat the Hot Fudge Sauce and dip each donut into the Hot Fudge Sauce and then place it back on the cooling rack.
In a sauce pan, combine the mini marshmallows and 4 tablespoons of water. Heat on medium heat and stir until melted. Remove from heat and carefully add melted marshmallows to a piping bag.
Snip the end of the bag and drizzle the marshmallow cream over the donuts.
Top each donut with mini marshmallows and crushed walnuts. (I cut my mini marshmallows in half so that they wouldn’t be too large for the mini donuts)
If you want to bake these mini donuts in the oven. Bake at 325F for about 8-10 minutes

These are the most adorable donuts I’ve ever seen. I have mini donut pans that I bought and used once….thinking I need to bust out those pans once again.

they look very cute, just made a batch the doughnuts taste like nothing though, its not that chococlate’y flavour i was looking for but still cute to take with you to a family event

325 for 10 minutes was really not enough time to bake these donuts in a pan. More like 350 for 10 to 12 minutes. Super unfortunate.
If you use a regular donut pan for these then yes they may need a different temp and time but for the mini donut pan, this is the temp and time I use. But remember that some ovens can vary.
