Mini Strawberry-Mascarpone Shortcake Trifles

My husband is seriously the best. I know that a lot of women say that but I personally could not have been given a better man to call my husband.  He got the day off  for Memorial day and while I worked on editorial calendars for the next few months and put the last few touches on blog posts for the up coming week, spent the morning standing in the kitchen working on breakfast and lunch for us.

Not only did he work on meals but he was making us a low carb meals because I’m finally getting back to the point where I don’t need to have the carbs with the medication I was having to take! I’m so exited about that, y’all!

So he whipped up lunch and then he got back into the kitchen after a little lunch break and started working on a cake. 🙂

Mini Strawberry-Mascarpone Shortcake Trifles

He doesn’t work in the kitchen with me all the time or write blog posts with me but sometimes he wakes up with ideas for the blog, well…he had one of those days.  So he got up early, went to the store and came home with a few bags of groceries and then woke me up to let me know about his dessert idea. haha. 🙂 He had a grand plan for this strawberry angel food cake, he even named it “Heavenly Angel Food Strawberry Cake”. He measured out everything and sliced his strawberries from our strawberry picking adventure over the weekend…into the oven it went.  Next he whipped up a Mascarpone cream to go with the cake. Y’all…a Mascarpone whipped cream, I have to admit that I never would have though to make that.

Fast Forward 35 minutes and the cake was ready.  He took it out, sat it up and on glass jar to cool (as you should with any angel food  cake) and waited.

Unfortunately when the time came to flip the cake out, it was a bust. 🙁 Super Sad face.  He played it off like it wasn’t a big deal but I have a feeling that his heart might have cracked a little, I know mine did.

BUT I told him that I didn’t want to waste that Mascarpone whipped cream that he made because it was delicious!

So we turned that cake fail into perfect little Mini Strawberry-Mascarpone Shortcake Trifles!

I cut off the bottom section of that angel food cake, cubed it into bite size pieces, sliced up some more of our fresh strawberries and Thomas topped them with his homemade Mascarpone whipped cream!

Holy Moly, y’all! They were good. I wasn’t sure if I was going to love that Mascarpone cream at first but it was fantastic; it was just perfect with the strawberries!

Mini Strawberry-Mascarpone Shortcake Trifle

Mini Strawberry-Mascarpone Shortcake Trifles Layers of sweet summer strawberries, fluffy angel food cake and a sweet Mascarpone cream!

  • Prep Time: 10m
  • Cook Time: 35m
  • Total Time: 45m
  • Yield: 3-4 For mini trifles

Ingredients

  • 1 box angel food cake mix
  • 1 1/4 cups water
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tablespoon vanilla
  • 2 cups sliced strawberries

Instructions

  • Preheat oven to 350F.
  • Whisk together the angel food cake mix and water.
  • Pour into an angel food cake pan or a loaf pan.
  • Bake for 35 minutes or until done.
  • Remove from oven - if using an angel food cake pan, sit on top of a glass bottle to cool - if using a loaf pan, tip onto side to cool.
  • Cool completely.
  • Once cool, cut into small cubes.
  • In a bowl, mix together the Mascarpone and heavy cream.
  • Mix in the powdered sugar and vanilla.
  • Mix until smooth.
  • Layer small jars with layers of cake, Mascarpone filling and sliced strawberries

    I love that your hubby comes up with ideas for your blog! That’s too cute! One of my best recipes is actually one my hubby came up with (peanut butter lava cakes). These trifles are amazing! I love strawberries this time of year.

    Oh my gosh, I think my heart broke a little as I’m reading, picturing his disappointment in his cake after all that work. Luckily, the outcome is perfect and goes to prove what I say ALL THE TIME – some of the best recipes are the result of mistakes!

    I love this. I do this kind of thing often, my cake flops and I turn it into a parfait. Works like a charm. This is one stellar trifle. I wouldn’t want to waste that mascarpone either. It looks dreamy!
