One Pot Mushroom Garlic Linguine

Be honest… how many of you are trying to put up your Christmas trees today? You know that at 12:01am on November 1st it’s “Game On” right? haha.

Well I’m going to try and make it through Thanksgiving without decorating for Christmas but that doesn’t mean that I won’t start listening to Christmas Music before then! After Halloween, Christmas is my 2nd favorite Holiday! So you can’t keep Christmas from me too long!

Did you get to celebrate Halloween last night? I know we did! We went trick or treating with our cousins Crystal and Levi and our god-daughters Layla and Emma!

I dressed up as Minnie Mouse, Layla was a Dinosaur and Emma was a Bumblebee! BigBear, Crystal and Levi were themselves haha. (Boring Old People!) haha 😉 Just Kidding (kinda)

I was a little disappointed in the amount of people passing out candy last night, or I suppose I should say the LACK of people handing out candy! There were hardly any porch lights on and hardly anyone in the Halloween Spirit.

I remember when we were little we use to go trick or treating from like 6pm-10pm and the streets were packed with kids! This year? The streets were empty. It was kind of sad actually.

Next year I guess we’ll have to hit up some of the trunk or treats, although I have to admit that I really miss the memories of going door to door. 🙁 People! Please get back into the Trick or Treating spirit! I miss you!

But let’s move back to November now! As we move on to November it’s hard to not notice that the temperatures are drastically changing! Do you know that it’s absolutely freezing here? I could see my breath when I took dogs out this morning and I’m surprised that the rain outside hasn’t turned into ice. I saw on Facebook that is was even snowing in the mountains a few hours from us! WINTER IS COMING! haha 😉

What do we do when it’s freezing out? We make comfort food! What comfort food do we make? PASTA…duh! 😉

While I’m sure I’ll be making tons of soups and stews soon I just can’t pass up the opportunity to have pasta! What’s even better is that this pasta is a ONE POT pasta! Everything is cooked in the same pot!

Yep, you dump everything into a pot, stir and cook until done!

One Pot Mushroom Garlic Linguine

One Pot Mushroom Garlic Linguine

  • Prep Time: 5m
  • Cook Time: 25m
  • Total Time: 30m
  • Yield: 6 servings

Ingredients

  • 1 box Linguine, uncooked
  • 6 ounces fresh Spinach
  • 8 ounces Mushrooms
  • 1 tablespoon Greek Seasoning (Or no salt seasoning salt)
  • 1 tablespoon chopped garlic
  • 1 teaspoon basil
  • 8 cups chicken broth (homemade or store bought)

Instructions

  • Break linguine noodles in half.
  • In a large dutch oven or large pot, combine the linguine, spinach, mushrooms, Greek Seasoning, garlic, and basil. Pour in the chicken broth. Stir.
  • Bring to a boil.
  • Cover and reduce to a simmer. Simmer for 20-30 minutes or until all of the liquid had been absorbed. Stirring occasionally.

    Sorry to hear that people were not in the trick-o-treating spirit by you – that would be very disappointing fingers crossed that they will be back next year. Oh, and no the Christmas tree in this house does not go up until – the earliest – a week before Xmas 🙂

    Love that this is one pot! And people putting up their tree the day after Halloween cracks me up. 😀 Isn’t it weird to have a tree up at Thanksgiving?! And even that’s weeks away.

    I love the Halloween photos, so ridiculously cute. And wait till you hear this one. Growing up we always put our tree up on Christmas Eve. It was a tradition. I must still have some residual issues because I always put mine up late. I always intend to be organized but things come up and we do a real tree so you don’t want to do it too early. Silly right.

    I love one pot dishes, this one is a real winner. Me and garlic are >likethis<

    I’m the worst. I love Christmas but they way they push it on me in October makes me dislike it by the time Christmas actually rolls around. Last year I didn’t even put up a tree….I’m so grumpy…haha. This pasta looks amazing! I love that it’s one pot.

    I noticed that too. I was left with a full bucket of candy, which I’ve been eating all week. So counterproductive to all the cardio I’m doing. Anyway, cute costumes! And this one pot situation must be killer. Love me some spinach and mushrooms.

    Oh, and the only reason I haven’t put up my tree is because my husband already gave me that “you’re cray” look when I burst out a rendition of Santa Baby.

    You can totally come to my neighborhood next year, our doorbell was ringing from 6-10. So glad I had a nice bottle of wine to keep me company when we got back from collecting treats. 🙂 I LOVE this recipe….it’s going to be perfect for the day I finally get around to decorating for Christmas. I save it for the day after Thanksgiving when all the crazy people are out shopping.

    we didn’t have many trick or treaters at all – but it was cold and rainy 🙁 nd I am all over a one pot meal, especialy if it includes pasta

    I’m trying to enjoy the rest of Fall, but Christmas is there in the corner of my eye. I find myself mentally decorating the house but I won’t physically do it until Black Friday (I don’t think anyway). This recipe is right up my alley! I LOVE mushrooms, pasta, cooking everything in one pot and spinach. I will use veggie broth to make it vegan and I’ll probably make it tonight- thanks for sharing!

    I’m with ya—I totally miss the door to door trick or treating I did when I was a kid. Now the trunk or treat is taking over! 🙁 On another note, this pasta looks insane! I love one-pot dishes and I LOOOOOVE mushrooms and garlic. Pinning to try ASAP!

    Truffle Lover Alert!! I would saute with truffle oil, the pasta and spinach and all ingredients before i added the chicken stock. Cook as stated then shred Montinlero truffle cheese on of the dish. This would be so gooood!!!

    Thank you for that shortcut!! Something similar to this is my college son favorite meal…
