It took me years to get around to making macarons at home after falling in love with them. I was terrified of making them at home but once I started making them, I fell in love with them.
Macarons at home do take a little practice but they’re wonderful little cookie sandwiches that can be made in any flavor combination that you can think of.
Today’s macarons are Orange Chocolate Macarons!
What you need for Orange Chocolate Macarons: (amounts in recipe)
- Powdered Sugar
- fine almond flour
- egg whites, room temperature
- salt
- Sugar
- orange extract
- orange gel food color
- heavy cream
- chocolate chips
I love the orange and chocolate combo of these macarons. I think it just looks so pretty.
The shells have a bit of orange extract in them that pairs perfectly with the chocolate ganache that they’re filled with.
HOW MUCH FOOD COLORING DO I NEED TO ADD TO MY MACARONS?
I normally go with about 2-3 drops of gel food coloring when I dye macaron batter depending on what color I’m going for.
This is something I really struggled with when I first started making macarons and sometimes I still have issues with it sometimes. Just remember that the color will come out a bit darker once the macarons are baked.
For example, when I was first attempting my light blue Robin Egg Macarons, I put in the amount color that looked good before baking. When they were done baking they were a dark blue which ended up being my cookies for these Blue Raspberry Macarons. haha
So sometimes it just takes playing around with the colors to see what works best. Just make sure not to add too much food coloring or it’ll change the consistency of the batter.
Same with the extract. Only add a little bit or you’ll make the batter too runny.
Orange Chocolate Macarons FAQ
- I’m allergic to almond flour, can I use something else?
I’ve only made macarons with almond flour. However, HonestCooking.com has a recipe that uses pumpkin seeds!
- I made these and when I went to pull them off the sheet the bottoms were gooey and sticky.
That sounds like the macarons are under baked. After baking always test 1 macaron by lifting it gently from baking sheet. If bottom tears apart, bake for 3-5 more minutes and test again.
