It’s no secret that pecan pie is at the top of my dessert list. Ever since I baked my first pecan pie and pulled it from the oven, I’ve been in love!
I make a killer chocolate chip pecan pie for almost every winter holiday and my bourbon pecan pie will knock your socks right off your feet.
So what’s a girl to do when she’s trying to make more pecan pie desserts for the holidays without making yet another pecan pie? She makes pecan pie cookie cups!
I started making cookie cups back when we first got married and Thomas deployed to Iraq. They were easy cookies that were quick to make and easy to ship. I had to make sure that whatever I was sending overseas would make the trip in tact. Well cookies cups did and the guys loved them.
Back then I just made them with store bought dough and chocolate chip centers but they were still fantastic.
Now-a-days I’ve changed it up a bit. Back in the summer I worked on my cookie making skills and rolled some perfect blueberry pie sugar cookie cups out of my kitchen! Now that we’re into the Holiday season I thought that I should add a bit of holiday flavor to them.
Tada! Pecan Pie Cookie Cups were born!
The crusts of these pies are made from a sugar easy sugar cookie dough. They’re filled to the top with my homemade pecan pie filling which is amazing!
After being filled. the Pecan Pie Cookies cups are topped with a single pecan before being baked!
I can’t think of a more perfect Holiday Dessert! These cookie pies are pretty and festive for Christmas Plus they’re easy to pick up and walk around with at a holiday party!!
