These Ranch Gyro Sliders are full of the fabulous flavors that you love in a regular gyro but downsized to the the perfect slider for your Super Bowl Party! Thank you to Sabra  for helping me share this recipe with you, I’m so excited to be one of their Tastemakers in 2016! As always, all opinions are 100% mine!

I will never be able to accidentally forget when the Super Bowl is, it’ll be connected to my wedding anniversary for the rest of my life. haha  I picked February 3rd, 2007 as our wedding day back in 2006 when I was planning things and unknown to me, I had picked the weekend of the Super Bowl!

While I’m not a huge football fan, my husband does enjoy watching the Super Bowl and we spent the next afternoon/evening as husband and wife, on our honeymoon, snowed in at a bar somewhere in Boone, NC eating bar food and watching the Super Bowl.

Fast forward to 2014 and we were in Hawaii celebrating our anniversary and I again found us in a bar, eating “bar food” and watching the super bowl. It’s funny how something like football, that I wouldn’t normally watch, ends up wiggling it’s way into the celebration of our marriage.

This year we’ll be at home for the Super Bowl (as far as I know), and I’ll be making our game day food in our own kitchen! Now I may not be the best football fan but I’m a huge fan of game day food. What can I say? It’s the foodie in me!

This past year, I managed to convert Thomas into a “Gyro Lover”, so these Ranch Gyro Sliders will definitely be hitting the table this year for game day and I’m so excited. I’ve loved Gyros for a while but until recently Thomas wasn’t interested in them.

He’s come such a long way as far as tasting new foods since we got married and last year at the Food Truck Rodeo in Raleigh I managed to talk him into trying a Gyro. Thankfully, he fell in love with the first bite!

This year I’m so happy to be working with Sabra as one of their Tastemakers and when Thomas and I were working on some recipe ideas for the Super Bowl, this idea for mini gyros popped into my mind! I couldn’t stop thinking about them which meant that we had to make them happen.

Let’s talk about the meat for gyros before we move onto anything else.  The first time we decided to make gyros at home we had no idea what we were doing. I thought that gyros were made with thinly sliced lamb from a lamb roast, I was wrong.

The lamb is thinly sliced but it’s from a “lamb meatloaf” that’s been slowly cooked on a spit. Well, I don’t have a spit or a rotisserie at our apartment so we cook ours in the oven but we do make our own “lamb meatloaf” for the gyro meat.

We grind our own lamb meat but you can totally find ground lamb at the store, we mainly grind ours because we’re having way too much fun with the meat grinder that we borrowed from my dad.

Once you’ve got your ground lamb, you’re just going to mixed it with the spices that I’ve listed below, mix it all together and form it into a loaf. Once you’ve done that, just wrap the loaf in plastic wrap and let it sit in the fridge for at least an hour. We let ours sit in the fridge overnight because it helps the flavors meld together and the longer it stays in the fridge the better it’ll stay together.

Once it’s had time to hang out in the fridge, you’re going to cook this in the oven until it reaches 165F and then slice thin pieces of the lamb off for the gyros.

This is how Thomas like his Gyro Sliders, he just wants them to be made with the hummus, lamb, lettuce and tomato.

Yes, we added hummus to these and we’re totally loving the flavor that it gives them. Plus Sabra’s Classic Hummus is perfect for holding the thin slices of lamb onto these Gyro Sliders.

Now these gyro sliders are just perfect like that but I like to add a touch of extra flavor to mine.

I like to add a dollop of Sabra’s Farmer’s Ranch Greek Yogurt Dip to finish mine and turn them into the delicious Ranch Gyro Sliders! Yes, I know that traditional gyros have Tzatziki sauce but we’re stepping out of the box here a little bit.  Just roll with me here.

For these Ranch Gyro Sliders, we cut out discs of flabread that are about 3-inches or so. We used my nana’s biscuit cutter to cut them out so that they would all be the same size but you could also buy small pita bread bites for these.

To build these, I spooned a bit of Sabra’s Classic Hummus onto the flatbread and laid 2-3 thinly sliced pieces of lamb on top.

The hummus adds a wonderful flavor to these gyros sliders and it helps the thin slices of lamb stay in place.

Top the lamb with a bit of shredded lettuce and then sprinkle a few diced tomatoes on top.

Finish them off with a small dollop of Sabra’s Farmer’s Ranch Greek Yogurt Dip.

That’s it, that all that needs to be done to make these Ranch Gyro Sliders for game day.

Now let me tell you that the recipe below is pretty much set up to make 20 of these little Ranch Gyro Sliders, as far as the lettuce, tomatoes, flatbread etc but if you only make 20 of these you’re going to have gyro meat left over. However this isn’t a bad thing! haha Make more Ranch Gyro Sliders or save it to make larger gyro sandwiches for lunch the next day!

Ranch Gyro Sliders

Ranch Gyro Slider All of the delicious flavors of a Gyro packed into a small, party sized slider!

  • Prep Time: 1h 30m
  • Cook Time: 2h 30m
  • Yield: 20 Ranch Gyro Sliders

Ingredients

  • 2 pounds ground lamb
  • 1 container Sabra Farmer's Ranch
  • 1 container Sabra Hummus
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 2 teaspoons onion powder
  • 1 tablespoon Greek Seasoning
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon pepper
  • 1 1/2 teaspoons salt
  • 20 3-inch flatbread circles**

Instructions

  • In a mixing bowl, combine the ground lamb, salt, pepper, minced garlic, oregano, Greek Seasoning and onion powder.
  • Mix the ground lamb and reasoning together.
  • Lay out two sheets of plastic wrap on a flat surface, slightly over lapping.
  • Form the lamb mixture into a thick log, about 5 inch by 7 inches.
  • Wrap the lamb mixture log in the plastic wrap and twist the ends closed.
  • Place the meat into the fridge for at least 1 hour (or preferable over night).
  • After the time in the fridge, preheat the oven to 300F.
  • Place the lamb mixture into a loaf pan or a small casserole dish.
  • Bake at 300F for 2 hours and 30 minutes or until the internal temperature of the middle of loaf reaches 165F.
  • Remove the lamb from the oven and drain off the excess grease.
  • Let the lamb sit for about 15 minutes and then slice the lamb into thin strips.
  • Starting with one of the flatbread discs, spoon some of the hummus onto the flatbread and top with 2-3 thin strips of lamb.
  • Top the lamb with shredded lettuce and diced tomatoes.
  • Dollop the top with about a teaspoon of the Sabra Farmer\'s Ranch.
  • Repeat steps with all of the flatbread discs.
  • **for our flatbread discs, we cut out circles from soft flatbread pizza crusts with a biscuit cutter. *There will be lamb left over if you only make 20. Save/Freeze it for later! Great for large sandwiches or more Ranch Gyro Sliders!

      Thankfully our Anniversary lands on a Wednesday this year which means the Super Bowl won’t be until Sunday but it still goes along with my Anniversary weekend this year hahaha.

    Althought the sliders really look mouth-watering and such a nice idea overall, I am the party-crashing nerd to say that probably you should name it donner rather than gyros. Gyros is pork, from the belly part of the animal, stacked and cooked on a slow-spinning spit… Nowadays you can also have chicken gyros… O tempora, o mores…!!!!
    By the way I am Greek… Hehehe….

      haha Thank you <3 I've heard and read that the real Greek ones are pork, but from what I've had and read American-Greek Gyros are a mixture of lamb and beef, but the only gyros I've had have been lamb so that's what I went with haha 🙂 Thanks for letting me know though! <3
