Slow Cooker Beef Stew

Slow cooker beef stew a is hard dish to photograph.  It’s warm, satisfying and comforting when the weather is a chilly 24F degrees but in front of a camera lens it tends to look kind of dull in my opinion. But no matter how dull I think it looks in photos, I still crave it when there is frost on the ground and the wind is whipping against our windows.

I swear that I could see my breath the other night when we were walking the dogs downtown.

We normally make our stews in a huge stock pot on the stove but I’ve been wanting to use our slow cooker more often. With that in mind, our beef stew sounded like the perfect recipe to start with.

The fireplace is roaring, I’m cuddled up under a super, soft fleece blanket and the smell of this beef stew is filling our apartment.  Tossing everything into the slow cooker before work makes dinner so much easier in the evenings.

I’m just so dang tired when I get home. You’d think that an office job would be easy and that I’d have plenty of energy when I get home. That’s just not the case. Working an office job may be physically easy but it’s mentally exhausted.

My husband works long, hard hours as a mechanic and I have to admit that sometimes I feel really guilty that I come home just as tired as him.

I should be able to be bouncing around at 6pm and making him the most amazing dinner ever. I should be, but at 6pm I’m tired as can be.

That’s why I’m all about the slow cooker and I’m jumping head first into looking for new and exciting dinners that I can leave to cook all day while I’m at work.

I want to provide comforting dinners for Thomas even if I feel like crawling into bed the minute that I get home from work. The days are getting slightly longer but it’s still dark by the time I get home.

Oh and I’ve been battling a bit of a cough too, so that’s not helping with me wanting to curl up and go to sleep by 7 every night.

Meals like this keep be from feeling like a super bad wife haha.

Slow Cooker Beef Stew

Quickly sear the stew beef, toss everything into the slow cooker, set to 8 hours on low and dinner will be ready when you get home!

  • Prep Time: 10m
  • Cook Time: 8h
  • Total Time: 8h 10m
  • Serves: 8
  • Yield: about 8 bowls of soup

Ingredients

  • 6 cups beef broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 teaspoon tomato powder (or 1 teaspoon tomato paste)
  • 8 ounces sliced mushrooms
  • 1 pound baby carrots
  • 6 medium red potatoes, cut into cubes
  • 1 tablespoon Pike's Peak Butchers Rub (or your favorite steak seasoning)
  • 2 tablespoons butter
  • 2 1/2 pounds stew beef (cut into bite size pieces)
  • 1/2 teaspoon onion powder

Instructions

  • Melt the butter in a skillet over medium heat. Add beef to the pan and sprinkle the Pike\'s Peak Butchers Rub all over it. Stir and sear until all sides are browned.
  • Add the red potatoes and carrots to the bottom of the slow cooker.
  • Add in the beef and mushrooms.
  • Whisk the pepper, garlic powder and onion powder into the beef broth. Whisk in the tomato powder.
  • Pour in the beef broth over the beef.
  • Cook on low for 8 hours or on high for 4.
  • Print

    Angie! Just because you’re not working on equipment all day, doesn’t mean you shouldn’t be tired! You work hard too! And you’re SO SMART to put this great-looking stew in the cooker. Mmm!

    Nothing better than a good beef stew on a cold day! And you’re right, it’s *hard* to photograph. Brown food always is. But your photo is making my mouth water 🙂

    I love beef stew in the winter time. When it’s in a crock pot, why not have a bowl and then curl up in bed at 7? Sounds like a great plan to me!

    Slow cooked always reminds me of my grandma! She love cooking this recipe! She said it’s healthy and extremely yummy! A luxury meal in her time. Totally miss it!
