Roasted Smoked Bratwurst and Summer Squash is a Farm to Table meal that everyone will love! Plus, it’s all roasted together on one pan in the oven! This meals is a simple, fresh and delicious lunch or dinner!

Roasted Smoked Bratwurst and Summer Squash

You know how sometimes you make something for dinner or lunch that you think might taste ok and it end up tasting amazing!? That’s how my love affair with this Roasted Smoked Bratwurst and Summer Squash meal came to be.

The first time I made this, I just needed to use up what was in the fridge and some vegetables that I had bought from the farmer’s market. I knew it would be ok, but I wasn’t prepared for how much I was going to love it.

Not only are the flavors wonderful but this is a super simple meal and since it contains a meat and veggies, I call it a complete meal around here!

Thomas and I have been trying to eat more “Farm to Table” meals over the past few years but this year we’ve been a much better job at it. We’ve been living across the street from our local farmer’s market for the past few year (which is amazing!) and I love going over there on Saturdays to see what’s new in the farm stands.

I try to use what I get over there at the market to plan our meals out for the week too.

Roasted Smoked Bratwurst and Summer Squash

I don’t know about y’alls farmer’s market but ours always have a TON of squash and zucchini during the spring and summer.  I’m guessing that it’s because it’s pretty easy to grow around here.

The booths at the market are always over flowing with them and I normally come home with a bag of each. haha. I love zucchini that’s been roasted or baked and squash with gnocchi and brown butter is amazing.

Mmmm and when you roast summer squash with smoked bratwurst and season it with a little Tajín seasoning, it turns into one of the best lunches that I’ve had in a while.

My best friend Nicole told me about Tajín seasoning a few months ago and I’ve been using it on everything.  It’s a seasoning mix that you can pretty much find at any grocery store and it’s a blend of Mexican chilies, lime juice and sea salt! So good!

Roasted Smoked Bratwurst and Summer Squash Roasted Smoked Bratwurst and Summer Squash is a Farm to Table meal that everyone will love! Plus, it's all roasted together on one pan in the oven! This meals is a simple, fresh and delicious lunch or dinner!

  • Prep Time: 5m
  • Cook Time: 30m
  • Serves: 4

Ingredients

  • 14 ounces pack smoked bratwurst (about 6 links)
  • 2 medium zucchini
  • 2 medium yellow squash
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons Tajin seasoning
  • 2 teaspoons fresh parsley. minced

Instructions

  • Preheat oven to 400F.
  • Slice bratwurst into 1/2 inch coins.
  • Slice zucchini and yellow squash into 1/2 inch pieces.
  • In a large bowl, combine the olive oil, garlic and Tajin seasoning. Mix well.
  • Toss in bratwurst, zucchini and squash to the olive oil mixture and toss well to coat everything.
  • Lay on a baking sheet in one layer and roast in the oven for 30 minutes.
  • Sprinkle with fresh parsley.
  • Print

    What else would be good to go with this, maybe some cabbage on the side? Even though it has the meat & veggies, I’m sure my BF would want something more to go with it, otherwise he’ll be in the kitchen later snacking on something else, haha

      Hey! You could make some white rice or quinoa to go with it. Or if you wanted to stick to veggies, something like a baked potato. You could make all of this and stuff it into a baked potato! YUM! I’m not really super crazy about cabbage but if thats something y’all like, that would work. Maybe a giant salad? Or maybe corn on the cob

        Making this tonight, can’t wait to try. I don’t have the Tajin Seasoning, but that’s ok. Bought cabbage, so going to fix that, but rice does sound good. haha! Thanks for the help and all your recipes!!
