From now until the end of time I will argue that Strawberries and Chocolate are two things that go perfectly together. They are seriously one of the best (and one of the most popular) flavor combinations!

Just think about it. Chocolate covered strawberries are everywhere especially around holidays), hot fudge sundaes with strawberries are a normal request (believe me, I worked in an ice cream shop) and chocolate cupcakes with strawberry icing…well those things are just heavenly!

Homemade Roasted Strawberry Chocolate Ice Cream

Chocolate covered strawberries were probably one of the first desserts I ever made. Super easy and everyone loves them (unless you’re my husband and don’t like strawberries). *He’s an Odd Ball*

Heaven knows I love chocolate ice cream and I couldn’t think of a better flavor to mix with it! Strawberries in homemade Chocolate Ice Cream?? Yes please!!! But oh and these aren’t just regular ol’ strawberries.

Possibly the BEST ice cream I've ever made! -- Homemade Roasted Strawberry Chocolate Ice Cream

I roasted those beauties! Oh my heavens, if you haven’t roasted strawberries before you need to take a moment and go do that… like now! My whole house smells amazing right now! I wish that you could smell this sweet strawberry fragrance wafting throughout the rooms of my home! I’m ready to dig in!

Homemade Roasted Strawberry Chocolate Ice Cream

Roasted Strawberries paired with Silk Chocolate Almondmilk is by far the best chocolate ice cream I’ve ever had!

My niece is here today and I’m so excited to share this ice cream with her! She loves strawberries just as much as I do!

I always say that Ice cream is the key to summer. There is no summer without ice cream! So go make some of this ice cream and enjoy your summer!

 

Roasted Strawberry Chocolate Ice Cream

  • Yield: Makes 2 quarts

Ingredients

Ingredients for roasted strawberries

  • 1 pint strawberries
  • 1 tablespoon brown sugar

For Ice Cream

  • 1 1/2 cups Silk Chocolate Almondmilk
  • 1 1/4 cups sugar
  • 3 cups heavy cream
  • 1 pint of roasted strawberries (recipe above)
  • 1 teaspoon of vanilla

Instructions

Directions for roasted strawberries

  • Preheat oven to 375F.
  • Cut off greens of strawberries and place onto a baking sheet with edges.
  • Sprinkles brown sugar over the strawberries.
  • Roast for 30 minutes. Remove from oven and let cool.

For Ice Cream

  • In the bowl of a stand mixer, mix together the Silk Chocolate Almondmilk and sugar. Mix for 5 minutes on medium speed until the sugar is completely dissolved.Once the sugar is dissolved, mix in the 3 cups of heavy cream and 1 teaspoon of vanilla.
  • Turn the ice cream maker on and pour the ice cream mixture into the ice cream machines frozen bowl.
  • Let the ice cream churn for 10 minutes.
  • Pour in the roasted strawberries.
  • Let the ice cream churn for 15 minutes.
  • Pour the ice cream into an air-tight freezer safe container.
  • Place into the freezer to harden.
  • (This may take anywhere from 2 hour to overnight, depending on your freezer).
  • Print
