I have a love-hate relationship with the cookie cups that I post on the blog all of the time. I love them because they’re fun to make, perfect for all types of fillings and flavors and they taste fantastic.
Sometimes they make my heart and soul hurt….
Why?
I swear that no matter how many times I made cookie cups, no matter what kind and no matter how many years pass since Thomas deployed to the desert when we were first married, cookie cups bring up those memories.
Every time I press cookie dough into a muffin pan I’m immediately transported back to our home at Camp Lejeune, standing in my kitchen alone, making cookie cups for Thomas’ care packages.
Back then the cookies cups that I made were a lot more simple than the ones I made now. They were mainly cookie cups filled with chocolate chips.
I’d bake them up and let them cool, wrap each cookie in plastic wrap and then I’d slip them down into empty Pringles cans. They’d safely make their trip across the ocean and a week or so later I’d get a call at 3am from my hubby thanking me for the package and letting me know how much he and his friends enjoyed them.
Thankfully, now I only have to wait until he’s home from work to share homemade cookie cups with him but it’s still crazy how a simple dessert can transport you back in time.
Sorry…I just got all sappy in this sweet cookie cup post but I just had to let it out. I feel like almost everytime I make cookie cups that I mention Thomas and his deployment haha. It’s just a cookie cup baking theme around here.
The cookie cup recipe I’m sharing with y’all today is a great Rocky Road Cookie Cups recipe that I worked on last month.
These are probably the closest to the original cookie cup that I started making years ago. You fill the chocolate cups with the filling mixture right when they come out of the oven and the heat from the cookies melted everything together to create the perfect little Rocky Road bite.
Now you can eat them after they cool a bit but I suggest waiting until they cool all the way before biting into them or you might end up with a mount full of melted chocolate….
Unless that’s your kinda thing…then bite away!
