Sausage and Gravy Biscuit Cups
These little biscuit cups are packed full of homemade southern sausage gravy and then baked until golden brown! Sausage and Gravy Biscuit Cups are perfect for breakfast or brunch! Heat a large skillet on high. Once skillet is hot, place the sausage in the pan and cook until done. While cooking. use a large metal spatula to press down on the sausage to help get some of the extra fat out of the meat. Right before the sausage is ready, place three pats of butter into the skillet with the sausage. Place 2 cups of whole milk into the microwave for about two minutes. (this makes sure that the milk won’t curdle when added to the sausage) Sprinkle 3 tablespoons of flour over sausage. Add warm milk, 1 cup at a time, stirring after each cup of milk is added. Bring mixture to a boil and then reduce to a simmer. Once you reduce the heat if the gravy is not as thick as you want you can add 1/2 teaspoon of flour at a time stirring after each one is added. Salt and pepper to taste and let simmer for about 10-12 minutes. When gravy is ready, preheat the oven to 350F Spray the muffin tin cups with cooking spray or butter. Press each raw biscuit into a flat circle and press them into a muffin tin. Press the raw biscuit down to form a cup. Scoop about 1/4 cup of sausage gravy into the cavity of the biscuit dough. Bake for 13-15 minutes until golden brown. Serve with extra gravy for dipping if desired. These should NOT be made too far in advance as they can get soggy. If you want to make the gravy in advance you can store the gravy in the fridge and then add it to the dough right before baking.
