Like the delicious White Cheddar Macaroni and Cheese with Ham and Peas recipe that I shared with you a few weeks ago, I had this recipe for Short Ribs and Grits and it’s photos published and featured in the Roanoker magazine in Roanoke, VA back in 2016 as well!
Thanks to life and having our little blessing, I forgot that I had the recipe typed up with photos to go along with it until recently! I love making Instant Pot Short Ribs and Slow Cooker Short ribs but this Oven version of Short Ribs that’s served over cheesy grits is fantastic!
What you’ll need for the Short Ribs : (amounts below in recipe)
- beef short ribs
- sea salt
- pepper
- olive oil
- garlic
- onion powder
- beef broth
- tomato sauce
- Worcestershire sauce
- honey
- fresh thyme
Why do I need to sear the short ribs before they cook in the oven?
The short answer is that is amplifies the flavor of the meat.
When you sear meat on a high temperature, like with this shirt rib recipe, you’re browning the outside of the short ribs and pretty much caramelizing the outside of each short rib before roasting it in the oven.
You don’t have to do this step BUT searing the short ribs does help to give this dish flavor and seared/browned short ribs are beautiful when finished cooking.
What you’ll need for the Cheesy Grits : (amounts below in recipe)
- whole milk
- yellow grits
- salt
- butter
- shredded cheddar cheese
While I normally pile short ribs onto mashed potatoes when I serve them at home, I served these short ribs over cheesy grits when I made them for the magazine so I am sharing that recipe below with y’all as well.
Either way, grits or mashed potatoes, these short ribs are amazing!
