This Slow Cooker White Chicken Chili is a recipe that my sister-in-law has been making for years!
Look, I know that this White Chicken Chili isn’t white. I don’t know why it is called “White Chicken Chili” haha but that is what she has always called it. Whenever we have chili night at their house, she always makes a big pot of regular chili and a pot of this tasty White Chicken Chili.
I knew I wanted to make this White Chicken Chili for the blog and so when I asked her for the recipe and she sent it over! It is a recipe that a friend of hers has given her on a little index card.
I’m going to teach you how to make it and then I’ll give you Meghan’s (my sister-in-law) tips and tricks for this chili!
Ingredients For White Chicken Chili:
- 3-4 boneless, skinless chicken breasts
- 1 (0.04 oz pack) dry Ranch-dressing seasoning
- 1 (1 ounce pack) Taco Seasoning
- 1 jar (16 ounce) chunky salsa
- 2 cans (15 oz each) Black Beans (drained)
- 1 can (15.25 oz) corn (drained)
- 1 can (14.5 oz) diced tomatoes (not drained)
- 2 cups chicken broth
- 1 block cream cheese, softened and cubed

How To White Chicken Chili:

Add chicken breast to the bowl of a slow cooker.

Sprinkle chicken with ranch seasoning and taco seasoning.

Pour salsa over the chicken.

Add beans, corn, and tomatoes.

Pour in chicken broth.

Add the cream cheese in and stir.

Add lid to slow cooker and cook on high for 4 hours or low for 6 hours.

Once done cooking, remove the chicken and shred it.
You can shred the chicken with two forks or you and pop the chicken into a bowl of a stand mixer, and shred the chicken with the stand mixer. -
Add chicken back to chili and stir.
Do You Season The Chicken For This White Chicken Chili?
When I make this White Chicken Chili, I only season it with ranch seasoning and taco seasoning. However, when Meghan makes this chicken, she seasons the chicken with garlic powder, onion powder, salt, and pepper.
Can I Use Pre-Cooked Chicken For This Chili?
I cook the chicken in the chili in the slow cooker but my sister-in-law will sometimes take a great shortcut and use a rotisserie chicken from the grocery store for this chili. Just shred all of the meat from the rotisserie chicken and toss it into the chili after about an hour or so of cooking.
It’ll reduce the cooking time so that this really turns into a quick meal.
If you don’t want to use a rotisserie chicken from the grocery store, you could always use my recipe for Air Fryer Roast Chicken or My Favorite Way to Roast a Whole Chicken for the chicken.
However, to keep it super simple, you can always just cook the chicken in the slow cooker with the beans and tomatoes.

- 1 (0.04 oz pack) dry Ranch-dressing seasoning
- 1 (1 ounce pack) Taco Seasoning
- 1 jar (16 ounce) chunky salsa
- 2 cans (15 oz each) Black Beans (drained)
- 1 can (15.25 oz) corn (drained)
- 1 can (14.5 oz) diced tomatoes (not drained)
- 2 cups chicken broth
- 1 block cream cheese, softened and cubed
Instructions
- Add chicken breast to the bowl of a slow cooker.
- Sprinkle chicken with ranch seasoning and taco seasoning.
- Pour salsa over the chicken.
- Add beans, corn, and tomatoes.
- Pour in chicken broth.
- Add the cream cheese in and stir.
- Add lid to slow cooker and cook on high for 4 hours or low for 6 hours.
- Once done cooking, remove the chicken and shred it.
- Add chicken back to chili and stir.
