Spinach and Artichoke Chicken Bake with Idahoan Signature Russets

The low carb adventures around here are still going strong! I’m actually surprised because I thought that I was going to be extremely miserable. However, I feel amazing. Please do note thought that I said LOW carb not NO carb haha. I still love pasta and potatoes. I could NEVER give those up and I know Thomas couldn’t either.

However, what I’ve been doing is skipping the huge pasta dinners and carb over load meals that I was enjoying, to focus on a low carb entree while pairing it with pasta or potatoes instead.

I could never fully give up potatoes and we ALL KNOW that Thomas is a meat and potatoes kind of guy! That’s why when I made this Spinach and Artichoke Chicken Bake for dinner I served it right along side an easy side if mashed potatoes.

Thomas is happy, I’m happy and I’m also don’t feel like I’m depriving myself of the foods that I love.

Believe me, I’ve tried going down that route and it just didn’t work out for me. If I try to complete X out a food or an entire food group, it just makes me want to binge eat! I don’t want to be doing that, so I’m still enjoying my favorites, just as sides and in smaller portions.

I’ll take a scoop of mashed potatoes as a side with my dinner any day if that means that I don’t have to completely give them up.

Not only is this an easy dinner idea that won’t break the bank or take up the entire evening to make; it also reminds me of my mom! Well the chicken bake doesn’t but the mashed potatoes do!

I remember these little sides of mashed potatoes from Idahoan in the pantry, heck, I bet there are some in her pantry right now.  They’re easy to make, ready in just a few minutes, great for dinners and even lunches!

Need a side for dinner? Just grab some of these Idahoan Signature Russets for a quick and easy side dish!

I whipped these up in about 5 minutes and topped them with a little pat of butter and a sprinkle of fresh dill right before serving.  These Idahoan Signature Russets are super smooth and have just a small hit of butter and cream in them as is.

Making a meal like this during the weekday won’t take up a ton of time.  Once it’s ready, you’ll forget that it was a snap to make. With this dinner, you’ll feel like you’re sitting down for a relaxing Sunday/Weekend meal that’s been cooking all day.

It’s almost like bringing a little bit of that Sunday dinner comfort into the middle of the week, without all of the extra work.

Spinach and Artichoke Chicken Bake with Idahoan Signature Russets

Spinach and Artichoke Chicken Bake with Idahoan Signature Russets

  • Prep Time: 5m
  • Cook Time: 55m
  • Total Time: 1h
  • Serves: 4

Ingredients

  • 10 - 12 chicken tenderloins
  • 1 cup Parmesan cheese
  • 1 cup cherry tomatoes, cut in half
  • 1 handful fresh spinach
  • 1 can quarted artichoke hearts, diced and drained
  • 1 teaspoon garlic powder or 2 cloves minced garlic
  • 1 tablespoon finely minced fresh dill
  • 1 tablespoon lemon juice
  • 1 cup sour cream
  • 1 tablespoon no salt seasoning salt
  • 1 ounce fresh mozzarella, sliced

1-2 Packets of Idahoan Signature Russets for a side

    Instructions

    • Preheat oven to 375F.
    • Lay chicken in a oven proof, 2 quart, casserole dish.
    • Sprinkle with seasoning.
    • In a small bowl, mix together the sour cream, lemon juice, fresh dill and garlic powder.
    • Spread over chicken.
    • Cover chicken chopped artichokes, making sure to squeeze all of the juice/water from the artichokes before adding to dish.
    • Top with Parmesan cheese.
    • Cover cheese with fresh spinach leaves.
    • Add sliced of fresh mozzarella.
    • Top with tomatoes.
    • Bake for 45 minutes or until chicken is done.
    • Place under broiler for 5 minutes or cheesy is toasted and bubbly.
    • Prepare Idahoan Signature Russets according to package directions and serve with chicken bake for an easy weeknight meal.

      Such a beautiful meal and I love how it’s low carb too. Although I try to go low carb mostly, my husband is a pasta and potatoes guy – he (we) would love this!
