Spinach Pasta with a Creamy Homemade Tomato Sauce

Spinach Pasta with a Creamy Homemade Tomato Sauce

It’s because the pasta is green isn’t it? I think that’s why I do double take when I see this pasta. I’m not use to seeing spinach pasta, it’s a whole new world for me. I’m use to the normal “white/yellow” pasta.

I mean that’s what I’ve always had and that’s the only pasta I even knew existed until a few years ago. But let me tell you, if you can wrap your brain around spinach pasta, you’re gonna have to give this a try!

Last year I really got into making my own pasta sauces. I mean I won’t lie, canned sauces are a total life saver and I still have cans of it in my pantry but I love making sauce from scratch. It’s not quite as sweet as canned sauce and I can pretty much add anything I want to it.

Spinach Pasta with a Creamy Homemade Tomato Sauce

This simple sauce is quickly made with diced tomatoes, herbs and a bit of cream cheese. Psst…if you’re use to (and like) a sweeter sauce you’re probably going to want to do a bit of a taste test while you’re making this and you may want to add a bit more basil and maybe a tad of sugar…however I beg you to try it without the sugar. 😉

Let’s take a second and go back to the spinach pasta. Now where do you get spinach pasta? Maybe it’s different in your town but spinach pasta just isn’t super popular in our grocery stores here. To be honest, I’m not even sure if our normal grocery stores carry spinach pasta.

So what to do if you can’t find spinach pasta in the regular grocery store?

#1. You could make your own! Now I can’t really give you too much guidance on making your own pasta but my friend Paula at Bell’alimento has a fantastic recipe for homemade spinach pasta as well as a few recipes for other homemade pastas like, Roasted Red Pepper Pasta and Fresh Beet Pasta!

#2. If you’re not quite ready to tackle the adventure of making your own pasta, check out stores like Marshalls, TJ Maxx and Home Goods. I know that sounds kinda odd at first but seriously, go and look. I find some of the best and some of the coolest pastas at Marshalls.

That’s where I find my spinach pasta. Oh and it’s not some weird cazy, funky pasta either. The ingredients list for this spinach pasta? Flour, Eggs and Spinach. Pretty awesome in my opinion.

Spinach Pasta with a Creamy Homemade Tomato Sauce

Makes about 4 servings                                                  (Click to Print)
Ingredients 
2 Medium/Smallish Tomatoes (about the size of a tennis ball), diced
1 (14.5 oz) diced tomatoes with the juice
1/2 teaspoons basil
1/2 teaspoon oregano
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon Greek Seasoning (or seasoning salt)
1/8 teaspoon pepper
1/2 cup water
4 oz cream cheese, room temperature & cut into chunks
1 or 2 handfuls of fresh Spinach
6-8oz Spinach Pasta, Store bought or homemade
Grated Parmesan cheese (optional)

Directions 

Add all of the diced tomatoes to a large skillet. Heat on medium heat.

Add in the basil, oregano, garlic powder and onion powder, Greek seasoning and pepper.

Whisk in water and let the sauce simmer.

Bring a large pot of salted water to a boil. Add in pasta and cook until tender. (About 10 minutes)

While the pasta is cooking, continue to let the sauce simmer on medium, stirring occasionally.

Right before the pasta is done, whisk the cream cheese into the sauce until melted. Taste the sauce and season to taste.

Drain pasta and toss with sauce. *Save some of the pasta water* Serve Immediately. *If the sauce gets too thick, add a little bit of pasta water to thin it out.

Top with Grated Parmesan cheese.
