I just love quick and easy lunch ideas! I’m normally working during the day and to be honest, I don’t have the time some days to work on a crazy over complicated  lunch.  If I can’t make something in about 15 minutes I’m not interested.

So normally for lunch, I’m having left overs or I’m popping a quick lunch into the oven like this Spinach and Tomato Pesto Flatbread Pizza!

On a weekend trip over to Kroger, Thomas and I picked up a few jars of FIND NO. 50 HemisFares™ Pesto alla Genovese, a few packages of naan flatbread and some fresh spinach so that I could make a few little pesto pizzas for lunch during the week.

With a few cherry tomatoes from the farmer’s market, I had everything I needed to make Spinach and Tomato Pesto Flatbread Pizzas!

I can whip these up in minutes!  I pop them into the oven for about 12 or so minutes and lunch is done!

I’ve included the recipe to make two of these Spinach and Tomato Pesto Flatbread Pizzas below but 1 of these is plenty for me during lunch.

The first time I ever made this  Spinach and Tomato Pesto Flatbread Pizza for lunch, I ended up making another one for dinner. That’s how much I loved the flavors of this pizza.

The flavors of the flatbread, FIND NO. 50 HemisFares™ Pesto alla Genovese and mozzarella are just perfect together.

Plus, I know I’ve told you that I can pretty much eat these little cherry tomatoes like candy. haha.

Now when I make these flatbread pizzas, I slice them into 4 triangles before I serve them. You could just cut them in half, but I like the slices.

Not a fan of tomatoes? You can totally leave those off.

You can really add any pizza toppings that you want to these little flatbread pizzas.

A few pepperonis? Perfect!

Want to make Thomas’ favorite? Add some pineapple and ham in place of the tomatoes! Or just leave all the toppings off and enjoy this pizza with spinach and cheese.

Spinach and Tomato Pesto Flatbread Pizza

Spinach and Tomato Pesto Flatbread Pizza This Spinach and Tomato Pesto Flatbread Pizza is ready in less than 30 minutes! It's perfect for a quick lunch or an easy dinner!

  • Prep Time: 5m
  • Cook Time: 15m
  • Total Time: 20m
  • Serves: 2

Ingredients

  • 2 slices naan flatbread
  • 1 jar (4.58 oz) FIND NO. 50 HemisFares™ Pesto alla Genovese
  • 2 handfuls fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, sliced in half

Instructions

  • Preheat oven to 400F.
  • Lay 2 pieces of naan flatbread on a baking sheet.
  • Spread 2-3 tablespoons of HemisFares™ Pesto alla Genovese onto each slice of flatbread.
  • Top each flatbread with spinach.
  • Add 1/2 cup shredded cheese to each pizza.
  • Top each pizza with cherry tomato halves.
  • Bake at 400F for 12-15 minutes or until cheese is melted and bubbly.
  • Cut into slices.
  • Serve.
  • Print

      I’m not really sure. We never make sides with Pizza. If I did make something to go with it I’d probably just make some kind of salad.
