As an adult, I find myself getting ridiculously excited over small things that I never thought I’d be excited over.

Like…

  • Short lines at the grocery store.
  • A new kitchen table.
  • Perfecting a Strawberry Cream Streusel Bar recipe that I’ve been working on for a while.

I also get excited about things like early bed times and organize schedules. haha Who am I? For Real! My Teenager self would be rolling her eyes right out of her head if she could see me now. haha

However, one thing my teenager self wouldn’t be rolling her eyes at would be these Strawberry Cream Streusel Bars!

I’ve loved strawberries since I was little and when I think of my favorite fruit, strawberries are pretty dang high on the list, if not the highest.  I fell in love with them even more a few years ago when I started getting them at our farmer’s market.

The strawberries from our farmer’s market are so good that I even got Thomas, who is anti anything strawberry, to admit that they were delicious.

Sure, I’m just fine with eating fresh strawberries or dipping them in cool whip, but baking them up is just as tasty.  I worked on these strawberry teats over and over again until they were perfect because I just wanted y’all to have the best Strawberry Cream Streusel Bars possible. I also didn’t want you to have to go through the tons of trials and errors that I went through to make these bars.

    After years and years of picking strawberries, making strawberry jam, strawberry shortcake and on and on,and even having strawberry wallpaper in my kitchen/dining room I developed an allergy to them. Your recipe looks divine so due to my allergy I’m going to use blueberries. I’ll let you know how they are.

    I like short lines at Costco without a 2nd person packing for me. I will dance a jig if I get to pack my own stuff. I hate the way they do it at Costco. The second they slide the seat forward so I can’t put my purse down I want to punch them in the throat a little bit. Not hard, just enough to get their attention. Yesterday the gal started flipping through my magazines. No, no, no, no. No one touches those till I read them. Arg!

    Okay, I’m all good now.

    I love these bars. Strawberry is always my favourite. Streusel just makes everything better.
