This Summer Corn Salad is great with fresh corn, frozen corn or canned corn! Packed with corn, tomatoes and feta cheese, this summer salad is going to be the perfect side dish for your next cookout or family dinner!
Corn is absolutely one of my favorite vegetables and has been one of my favorites since I was old enough to eat it.
I love corn on the cob, Mexican Street Corn Dip, Creamed Corn Macaroni and Cheese, Instant Pot Chicken Corn Chowder, ooo I could eat it all the time. Or you know just some sweet corn with some salt and butter….. perfection!
Today though, we’re making a summer corn salad that would be a perfect side dish for dinner or a great pot luck dish for a cookout or BBQ.
Ingredients For Summer Corn Salad:
- fresh corn
- olive oil
- onion powder
- salt
- pepper
- a lime
- honey
- feta crumbles
- grape tomatoes
- Parsley optional

How To Make An Easy Summer Corn Salad:

In a medium bowl whisk together the olive oil, onion powder, salt, pepper, juice from 1/2 a lime and honey. Set aside.

Cook corn, however you’d like. You can grill the corn, boil the corn (which is amazing the way I do it), air fry the corn or you can even cook the corn in the microwave like I did for this recipe.

Once the corn is cooked, toss it in a large bowl, slice the tomatoes in half and toss those into the corn as well. Mix together.

Add in the olive oil honey dressing to the corn and mix well.

Sprinkle with the feta and lightly toss.

Taste test and add more salt and pepper if needed.

Chill until ready to serve.
* I think this taste best cold but you can serve it warm as well.
You can also garnish this corn salad with a bit of chopped parsley or cilantro. I like to do that to add a little pop of green color to my salad.
Also, feel free to add other ingredients to make this salad your own. I know a lot of people add red onions and avocados to theirs, as well as thin slices of English cucumbers.
How Do I Cook The Corn?
If you’re using ears of corn, there are a few ways to cook them. You can grill the corn, boil the corn (which is amazing the way I do it), air fry the corn or you can even cook the corn in the microwave like I did for this recipe.
You can also use the steam in a bag corn or heat up some canned corn on the stove top.
An ear of corn will give you about 1/2 cup of kernels.
