This weekend is going to be a cold one and we’re expecting a ton of snow. That means that it is time to whip of a batch of two of our favorite soups! This ham and bean soup is one of those soups that I love to make and have simmering away at the snow falls outside!
Snowy weekends should be for sleeping in, cozy afternoons on the couch by the fireplace and soups simmering on the stove.

What kind of ham do you use for ham and bean soup?
I like to buy the little cubes of ham that are already cut up but you can also buy “ham steaks” from the deli in whatever thickness you like and cut them into small cubes for this recipe. This recipe is also great for using leftover ham that you might have from a Christmas Ham or Easter dinner.
How to make Tuscan White Bean Soup with Ham:
- Heat Olive Oil
In a large pot, heat olive oil over medium- high heat on the stove top.
- Add garlic
Add minced garlic and cook for 1-2 minutes until garlic starts to brown.
- Add ham
Add ham and stir.
- Heat/Cook ham
Cook for 2-3 minutes.
- Add Onion powder and drained beans
Add in the onion powder and stir. Pour in the Cannellini beans and stir. Sautee and cook for about 2 minutes.
- Chicken Broth and Rosemary
Pour in the chicken broth. Stir. Add in the sprig of rosemary and bring to a simmer.
- Simmer
Cover half way and simmer on low heat for 30 minutes.
- Add the spinach
With 10 minutes remaining on the timer add in the spinach and stir.
- Season to taste
Season with salt and pepper.

I haven’t made this recipe with dried beans but if you soak and cook them beforehand you shouldn’t have an issue.
Yep! They’ll work just fine.
While I normally stick to just the beans and spinach for this bean and ham soup, you could also add chopped celery or sliced carrots.
Ham hocks are great for adding flavor and I do use them in some recipes like my favorite collard greens recipe . However, this recipe is a little too quick to really develop a flavor from ham bones. However, if you wanted to make a stock from ham bones beforehand and use that in place of the chicken broth, you could!

Ingredients

- 4 cups reduced sodium chicken broth
- 1 spring of fresh Rosemary
- 1 -2 cups fresh spinach
- Pepper and Salt (or no salt seasoning salt)

What a perfect soup for fall! We too are trying to slow down this winter and really take time for those who matter to us. It’s strange that it can be so hard to just spend quality time. But, hopefully with practice, it will become as much of a habit as being busy can be.
