Cheesy Broccoli Chicken and Rice

Monday….. the beginning of the week, the start of the work grind, a day that nobody likes.

Not only am I trying to adjust to the work week and get everything settled and ready for the week on Mondays but I’m normally not prepared for dinner by time 6 pm rolls around on Monday evening.

Thomas will call me at 5:01 when he get off work and he’ll ask me, “So, What’s for Dinner?” Then I’ll huff and puff with an “I don’t know” and he’ll try to convince me to order pizza or Chinese take out. haha

It’s not that I’m against pizza or Chinese take out but I’d rather make dinner at home..even if I’m not totally prepared.

So since today is Monday and since I would normally not have anything planned for dinner on a Monday evening I thought this would be the perfect day to share this Cheesy Broccoli Chicken and Rice dinner idea with y’all.

It’s tasty and super quick to make, plus it’s exactly what I need in the evenings!

So what are you going to need for this quick and simple Monday night dinner recipe? You’re going to need 6 ingredients, an oven and about 45 minutes of your time.

Come on, you can spare 45 minutes for dinner right?

I mean technically the oven is going to be the only one working for 40 of those minutes. 😉

Let’s start, shall we?! Walk on over to the oven and let’s get it preheated. You’ve got this. 😉 Work with me here.

Preheat the oven to 400F.

 

Lay some chicken in a 9×13 pan (or a 2 quart baking dish) and top it with some broccoli florets.

 

Next, grab a packet of the NEW Campbell’s Oven Cheesy Broccoli Chicken Sauce.

Pour that all over the broccoli and chicken.

Pop that into the oven and bake at 400F for about 40 minutes or until the chicken is cooked throughout.

With 10 minutes remaining on the oven timer, bring 2 cups of water to boil. Crush the saffron and add it to the boiling water. (I crush saffron with a mortar and pestle)

Stir in the rice, remove from heat, cover and let sit for 5 minutes or until tender.

 

 

Remove chicken from the oven and let it cool for just a minute or two.  Let’s not rush and burn our hands.

 

 

 

Plate this dish by placing some rice on a serving plate and topping the rice with the chicken and broccoli.

 

Then it’s time to dig into this rich, deliciously cheesy broccoli and chicken rice!

A complete dinner in less than an hour. I mean that’s a dinner that I can totally get behind. I’ve always been a sucker for broccoli and cheese.

Plus, we all know that I could eat chicken every night of the week and be perfectly fine.

I loved it, Thomas loved it and I know you’re going to love it too.

Cheesy Broccoli Chicken and Rice

Makes 4-6 servings

Ingredients

3-4 skinless, boneless chicken breasts (or 8 chicken breast tenderloins)
4 cups frozen broccoli (or fresh)
1 package (12 oz) Campbell’s Oven Cheesy Broccoli Chicken Sauce

2 cups instant white rice
2 cups water
20 strands of saffron
Directions

Preheat oven to 400F.Lay chicken in a 9×13 pan (or a 2 quart baking dish).Top chicken with broccoli florets.

Pour  Campbell’s Oven Cheesy Broccoli Chicken Sauce over the broccoli and chicken.

Bake at 400F for 40 minutes or until chicken is cooked throughout.
