I’ve never made a cookie that was this popular before! I’ve had recipes that people really loved before but these cookies seem to “take the cake”. Hot Chocolate cookies will even have non cookies lovers asking for more! How do I know this? Well because people have told me….hundreds of times!

A few years ago I went to our cousins house and she was baking up a few batches of Christmas Hot Chocolate Cookies to take to her friends and neighbors.  I fell in love with them and wanted to recreate them at home. I asked for the recipe, took mental notes and set off to create some amazing cookies at home.

They were a hit and I’ve been making them for almost every big holiday since! Even in the summer time people go crazy over these! I made a patriotic version last year for the 4th of July Family Pool Party and they were gone before we were half way through the party! I’ve also made Easter ones, a Valentines Day version and now Unicorn Hot Chocolate Cookies!

However, these didn’t start off as Unicorn Hot Chocolate Cookies. I actually make them for my brother and sister in law’s Gender Reveal Party!!

YAY! I’m getting a nephew, y’all!

I’m so excited! I already have a sweet niece Savannah from my husband’s side that I’ve mentioned on the blog before but now we’re adding a nephew to my side of the family! I’m so happy and I can’t wait to meet the little bundle of sweetness! Jackson will only be a year older than his baby cousin and I can’t wait to see them grow up together.

I’ll be posting more about the gender reveal because I know a lot of y’all loved the Putters and Pearls gender reveal party we had last year when we had our sweet little J, so I bet y’all will get some good ideas from the party I threw for Adam and Megs too!

 
Unicorn Hot Chocolate Cookies
 

So to turn my favorite Hot Chocolate Cookies into Unicorn Hot Chocolate Cookies (Gender Reveal Party Hot Chocolate Cookies), I made my recipe the same as I always do and I just switched up the sprinkles! It’s that easy to give these cookies a whole new look!

I bought these Cotton Candy Kiss Sprinkles from a shop on Etsy called, Fancy Sprinkles Shop!

I originally bought them to just go on the chocolate cupcakes for the party but I also ended up using them for these cookies. After I made them, even though they were for the gender reveal party, I looked at them and they said, “Unicorn Hot Chocolate Cookies” to me haha.

So since I have a Unicorn No Churn Ice Cream on the blog already and well because Unicorns are pretty darn awesome, I thought I would present them to y’all as perfectly fabulous Unicorn Hot Chocolate Cookies!

Unicorn Hot Chocolate Cookies

Unicorn Hot Chocolate Cookies Recipe

Unicorn Hot Chocolate Cookies Hot Chocolate Cookies are the MOST requested dessert at our parties and cookout outs! This version is what I like to call "Unicorn Hot Chocolate Cookies"Just like my Christmas cookies, they're rich chocolate cookies with melted marshmallows stacked on top with a chocolate glaze drizzle and sprinkles!

  • Yield: 45 cookies

Ingredients

FOR THE COOKIES:

  • 1/2 cup butter, unsalted (1 stick)
  • 12 ounces semi-sweet chocolate chips
  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 1/2 cups brown sugar
  • 2 teaspoons chocolate extract (or vanilla if you can't find chocolate)
  • 135 mini marshmallows (3 per cookie)

FOR THE GLAZE:

  • 4 tablespoons melted butter
  • 1/4 cup cocoa powder
  • 1/4 cup hot water
  • 2 cups powdered sugar
  • 1 teaspoon chocolate extract (or vanilla if you can't find chocolate)
  • Sprinkles

Instructions

For The Cookies:

  • In a small sauce pan, melt the butter and then whisk in the semi-sweet chocolate chips. Whisk together until the butter and semi-sweet chocolate chips melt into a smooth chocolate sauce.
  • Set aside and let cool.
  • In a large bowl, sift together the flour, cocoa powder, baking powder and salt.
  • In the bowl of a stand mixer, combine the sugar, eggs and extract together. Mix until well combined.
  • Once the chocolate and butter mixture is cooled mix it into the sugar, eggs and extract.
  • Slowly whisk the flour mixture into the chocolate mixture.
  • Mix until everything is combined. Cover in plastic wrap and place into the fridge for 1 hour.
  • Remove dough from the fridge after one hour and preheat oven to 325F.
  • Grease 3 cookie sheets (or use the same one over and over). - Line the baking sheet with parchment paper for easy clean up -
  • Spoon out about a tablespoon of chilled dough and roll it into a ball. Lay it onto a prepared baking sheet.
  • Place about 12-15 cookies onto each baking sheet. Press each cookie down a little bit.
  • Bake for 10-12 minutes. Remove from oven. Top each cookie with three mini marshmallows. Place back into the oven for 2 - 3 minutes.
  • Remove cookies from oven and place on a wire rack to cool. Repeat until all cookies are done.
  • Let cookies cool and make the chocolate glaze.

For the GLAZE:

  • In a medium bowl, combine the melted butter, cocoa powder, hot water and chocolate extract (or vanilla extract).
  • Slowly whisk in the powdered sugar until everything is combined.
  • Lay a piece of parchment paper under the cooling rack that is holding the cooled cookies. (This will make for easy clean up!)
  • Drizzle each cookie with the chocolate glaze, covering the marshmallows. While the chocolate glaze is wet, sprinkle each cookie with the sprinkles.
  • Let Cookies and Chocolate glaze set for about 30 minute before serving.
  • Keep cookies in an air tight container.
