Are we excited about Spring yet?! I know Spring started over a month ago but I don’t think that mother nature got the memo because it was still super cold here for a while after spring “arrived”.

Thankfully though the weather has started to warm up and my flowers are even starting to bloom! Did you hear that? My flowers are starting to bloom!! Flowers that we planted last year are actually coming back! haha I may have some sort of “green thumb” after all or I just got super lucky and these flowers really wanted to survive!

Another reason I’m thankful for this nice weather? We did a 5k for Autism Awareness on Saturday and the weather was perfect. (Um… yes for those asking, I did walk it haha no running here) 🙂

In order to celebrate, I made cupcakes. You’re welcome! Really, I made them for you! 🙂 The urge to bake hit as Nicole, Nikki and I were eating lunch after the 5k and we started talking about cake pops and brownies! That conversation made me really want to get into the kitchen and work on some recipe ideas that I had been keeping in my notebook. Yes, I have a notebook that I write my recipe ideas down in don’t laugh. 😉

Vanilla Almond Chocolate Chip Cupcakes happened thanks to that “need to bake” and let me tell you, BigBear LOVED them. He said they tasted just like Chocolate Chip Cookies (well in cupcake form of course) 😉

I do believe it was the Silk Vanilla Almondmilk that I used in the batter! These Vanilla Almond Chocolate Chip Cupcakes were soft with a crispy top; just like a chocolate chip cookie!

I don’t know about you but sometimes I really want to decorate cupcakes….I mean as in I don’t want to just swirl icing on top and be done with it. Sometimes I want something different, sometimes I want fancy! But most of the time “fancy” designs stress me out and I end up with nothing but cupcake mess and frustration!

But don’t be discouraged! You can decorate super cute cupcakes at home without getting into crazy (and stressful) details!

See those pretty flowers on top of those cupcakes? They are so easy to make; they’re made of chocolate and I used little round sprinkles that I had on hand for the centers.

Homemade chocolate are some of the simplest and prettiest ways to decorate cupcakes! All you need is colored chocolate and a mold from your local craft store! These molds cost about $2 at Hobby Lobby. 

And the grass? I made my favorite homemade cream cheese icing,  added a little bit of Silk Vanilla Almondmilk to it as well as a bit of green food coloring and used a piping tip to quickly pipe “grass” onto each one!

Vanilla Almond Chocolate Chip Cupcakes

Ingredients 
For the Cake:

  • 1 box white cake mix
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon salt
  • 4 egg whites
  • 1 1/2  cup Silk Vanilla Almondmilk
  • 2 tablespoons vegetable oil
  • 2 teaspoon vanilla
  • 1 cup mini chocolate chips

For the Icing

  • 1/2 cup butter, softened
  • 8 cups powdered sugar
  • 2 teaspoons vanilla
  • 8 oz Cream cheese, softened
  • 4-5 tablespoons Silk Vanilla Almondmilk
  • Green Food Coloring
Chocolate Flowers 
  • Colored Melting Chocolate (I used Yellow and Blue)
  • Flower Chocolate Mold 
  • Tiny Round Sprinkles (options – for centers of flowers)

Instructions for the cupcakes 

Pre-heat oven to 325F.
 In a large bowl, mix together the white cake mix, flour, sugar, and salt. Set Aside. 
 In the bowl of a stand mixer, mix together the egg whites, Silk Vanilla Almondmilk, and vanilla. 
Mix on low for about 10- 20 seconds.
Slowly add the dry mix a little at a time; mixing on low until everything is combined.  
Mix in the mini chocolate chips. 
Line a cupcake tin with paper liners. 
Fill each cupcake liner 3/4 full of batter. 
Bake for 30 minutes. Remove from oven and cool

Instructions for the icing

Cream butter in the bowl of a mixer. Add cream cheese and mix well.
Slowly add powdered sugar while the mixer is still mixing on low.
Slowly add the vanilla. Add in the Silk Vanilla Almondmilk 1 tablespoon at a time until the icing is the desired consistency. (If you’re going to pipe “grass” onto the tops of the cupcakes you’ll want the icing to be kind of thick)
Add in green food coloring and mix well. 

Instructions for the Chocolate Flowers

Melt the chocolate according to the package directions. (I melt mine in the microwave, 30 second burst, stirring after each one until the chocolate is melted)

Fill the flower molds with the chocolate and place into the fridge for about 15 minutes or until they are completely hard. Pop the chocolates out of the mold when ready to use. 

Instructions for Decorating

Fill a piping bag (or a quart sized ziplock bag) fitted with a #16 tip (Small Star) with the green icing. Pipe little stars onto the top of the cupcakes for “grass”.

Add one or two chocolate flowers onto each cupcake. Add a tiny round sprinkle to the center of each chocolate flower.

Yields: 48 Vanilla Almond Chocolate Chip Cupcakes (cut the recipe in half for less)
