Vanilla Cinnamon Candied Pecans #VanillaWeek

This is going to be a pretty fantastic week. I don’t know if you’ve heard or not but today kicks off #VanillaWeek! That’s right, my friends, an entire week dedicated to vanilla!

 #VanillaWeek is hosted by Terri from Love and Confections and she’s invited myself and a handful of other bloggers to join in! Chocolate normally takes over the internet around this time of year but the #VanillaWeek Bloggers have come together to focus on one of our favorite flavors – Vanilla. We hope you join us throughout the week where we will be sharing vanilla recipes from breakfasts, drinks, desserts and even savory dishes! Also, don’t forget to check the end of this post for our big #VanillaWeek giveaway!

My first recipe of the week? Vanilla Cinnamon Candied Pecans! These are ridiculously tasty and they couldn’t be easier to make.

I’ve always loved candied pecans but I was reminded of them again during Christmas when Meghan brought a jar of them home from work one day. A girl she knew in Lynchburg made them and sold them in big mason jars! I really wanted that recipe but I heard that this candied pecan maker was quite intent on keeping her recipes under lock and key. 😉 *fine…if you must*

What’s a girl to do? I wanted more of these pecans! So, I made some.

I took a photo of the ingredients list on Meghan’s jar of pecans and started mixing up my spices. I decided to change it up just a bit though because I wanted a sweeter taste and I wanted that punch of vanilla!

The final version of these babies left my house smelling amazing! You have no idea how badly I want to turn that warm vanilla cinnamon scent into a candle! How fantastic would that be?!?

I’ve got to work on that. haha – Next project!

I packaged up a big jar of these and took them to Meghan as a late birthday present and I do believe that they were loved by everyone!

Which reminds me… I need to make some more of these!

Vanilla Cinnamon Candied Pecans

Ingredients 
1 cup white sugar (I used Dixie Crystals)
2 cup brown sugar (I used Dixie Crystals)
2 tablespoon cinnamon
4 tablespoons vanilla (I used Nielsen-Massey Vanillas)
2 egg whites, whisked
8 cups pecan halves
Directions

Preheat the oven to 300F.

In a large bowl, whisk the egg whites and vanilla together.

Fill a gallon size bag with the sugars and cinnamon. Close the bag and use your fingers to mix the sugars and cinnamon together.

Toss the pecans into the egg white and vanilla mixture. Toss to coat! Make sure that all of the pecans are coated.

Pour the pecans into the bag with the cinnamon sugar. Close the bag and shake! Shake, Shake, Shake until all of the pecans are coated.

Dump the pecans out onto a baking sheet into a single layer. (line with parchment paper for easy clean up).

Place into a preheated oven and cook for 20 minutes. After 20 minutes, carefully use a spatula to toss/flip the pecans.

Cook for 20 more minutes.

Remove from oven and let cool.

Store in an air-tight container.

    I love candied pecans- I usually get suckered into buying them at all the craft fairs in town. But gosh, they can be so darn expensive! GOing to have to try these- homemade is always better!

    These look fantastic! So happy to have a good homemade recipe for candied pecans – they can be so expensive! Let me know when you get that candle made – I’d love it too! Although, I think it would make me hungry haha

    Thanks so much for sharing! Don’t you hate it when people won’t share a recipe? I think it’s kind of sadistic. What’s the point in giving people a taste of something they will love and want to make at home, and then deny them the pleasure of enjoying it again? So selfish. Hope there’s a karma for that! lol

    Yeah, love vanilla so vanilla week is going to rock the house. These look so good. I could go for a big bowl of these right now. Watching Grimm and lacking snacks. These would be perfect for noshing.
