What you need for ButterBeer Sandwich Cookies:
- unsalted butter
- Dixie Crystals Dark Brown Sugar
- eggs
- vanilla extract
- all-purpose flour
- butterscotch pudding mix
- baking soda
- salt
- cream soda
- butterscotch chips

What is ButterBeer?
ButterBeer is a fictitious drink that everyone loves in the Harry Potter series! It’s described as being somewhat of a Butterscotch flavored drink. At the Wizarding World of Harry Potter at Universal Orlando there is a recreation of ButterBeer that’s made up of a cream sod and butterscotch flavor and a sweet whipped topping.
So that’s where the inspiration for these cookies came from. Both the cookies and the filling are made with cream soda and butterscotch whiches makes them the perfect Haprry Potter ButterBeer themed cookies.
I have the Wizarding World of Harry Potter at Universal Orlando on my travel bucket list but until then, I guess I’ll just have to stick to making my own homemade BeerButter cookies and drinks.

ButterBeer Sandwich Cookie FAQ:
The filling doesn’t HAVE to go in the fridge and will set up without going into the fridge. However, I found it easier to pipe the frosting into the center of the cookies after it had chilled for a bit.
If you put a ton of filling into the cookie and smash them together, then YES it will. I added a bit more than needed for photos just so that the filling would show up well in photos but a thin layer of frosting taste just fine.
Nope! We tested them both ways in airtight containers. Both tests tasted good but the ones left out on the counter in an air tight container tasted better. The ones in the fridge were a bit on the dry side but still good.

Butter Beer Sandwich Cookies
These ButterBeer Sandwich Cookies are inspired by the famous ButterBeer from Harry Potter! Butterscotch and Cream Soda make up both the cookies and the filling plus they’re decorated with a few magical golden sprinkles!
Ingredients
ButterBeer Cookies
- 1/2 cup butter, unsalted, room temperature
- 1 cup Dark Brown Sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 (3.4oz) package of butterscotch pudding mix
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 ounces cream soda, room temperature
- 2 cups butterscotch chips
ButterBeer Filling:
- 1/2 cup butter, unsalted, room temperature
- 1 (3.4oz) package of butterscotch pudding mix
- 1/4 cup Powdered Sugar
- 6 ounces cream soda, room temperature
- Optional decorations - gold sprinkles
Instructions
Preheat oven to 3525°F.
In the bowl of a stand mixer, beat together butter and sugar until creamy.
Mix in eggs and vanilla extract.
In a medium bowl, whisk together flour, dry pudding mix, baking soda, and salt.
Slowly add the dry ingredients to the wet ingredients. Mix until combined.
Slowly pour in 3 ounces of cream soda and mix to combine.
Remove bowl from mixer and stir in 2 cups butterscotch chips.
Use a small/medium scoop to form dough into balls.
Place cookie dough balls onto a prepared baking sheet lined with a baking mat or parchment paper. Leave about a 2 inch space between each cookie.
Bake 13 minutes.
Remove from oven and let cool slightly before moving to a cooling rack. Cool cookies completely on wire rack before filling.
ButterBeer Filling:
While cookies are baking and cooling, work on making the filling.
Combine butter and vanilla in a bowl and mix with an electric mixer until smooth.
Mix in powdered sugar and butterscotch pudding mix.
Slowly pour in cream soda, 2 ounces at a time, stirring after each addition until the desired consistency is reached.
Place pudding mixture into the fridge for 10 minutes.
Spoon chilled pudding mixture into piping bag and pipe onto flat side of 17 cookies. Top filled cookies with remaining cookies to create sandwiches.
Sprinkle filling sides with gold sprinkles.
