This Roasted Chicken Leg Arroz Con Pollo dish is my take on our favorite Arroz Con Pollo dish that we order at the Mexican Restaurant here in town.

Roasted Chicken Leg Arroz Con Pollo - This Roasted Chicken Leg Arroz Con Pollo dish is my take on our favorite Arroz Con Pollo dish that we order at the Mexican Restaurant here in town. 
If you asked my brother or his wife where they want to eat dinner when we plan to go out, I will bet money (lots of it) that they’ll say that they want Mexican! I’m pretty sure that they could eat at the Mexican restaurant  every day and be perfectly happy.  haha
Don’t get me wrong, I love it too, I just can’t eat out every day.  However, I do love to recreate restaurant meals at home during the week and this is one of those meals.

It’s also an old recipe that I first published on BigBearsWife.com back in 2011! Back then my recipes were tasty but the photos were awful! I’m not perfect with my food photography now but I’m a whole lot better than I was.

So I thought that it was about time to re-do the photos for this Roasted Chicken Leg Arroz Con Pollo and to rework the recipe just a tad.  I didn’t change much with the recipe though.

I changed up the cheese and the seasonings but other than that it’s pretty much the same recipe that I posted back in 2011. Back when I first posted this recipe, I used regualr white cheese. NO, don’t do that. haha This Queso cheese is much better.

I also used a creole pampered chef seasoning on this chicken back when I first started making this chicken. However, I don’t sell pampered chef anymore and I know it’s not something that everyone can get their hands on it.

So because of that I thought that I would change up the seasoning a bit to make it easier for everyone to make this at home.

I mean no one wanted to make a recipe if they can’t find the ingredients easily.
So instead of the Pampered Chef seasoning, I used the following:
  • Black Pepper – easy enough to find anywhere
  • Seasoning Salt – I used the Soul Seasoning from Food Lion but any seasoning salt will work
  • Badia Complete Seasoning – My friend Nicole told me about this chicken seasoning a while back and I LOVE IT!

Roasted Chicken Leg Arroz Con Pollo

Roasted Chicken Leg Arroz Con Pollo This Roasted Chicken Leg Arroz Con Pollo dish is my take on our favorite Arroz Con Pollo dish that we order at the Mexican Restaurant here in town. 

  • Prep Time: 10m
  • Cook Time: 1h
  • Total Time: 1h 10m
  • Serves: 4

Ingredients

  • 8 chicken legs
  • 2 ounces olive oil
  • 1/2 teaspoon seasoning salt
  • 1/2 teaspoon chicken seasoning (I used Badia Complete Seasoning)
  • 1 can peas, drained
  • 1 can corn, drained
  • 4 cups yellow saffron rice
  • 2 cups queso cheese (shredded)

Instructions

  • Preheat oven to 350F.
  • Place your chicken legs on a baking sheet and lightly drizzle olive oil over chicken.
  • Sprinkle seasoning over chicken.
  • Bake in oven for 1 hour or until chicken is done.
  • Cook yellow rice according to package (usually takes about 25 minutes).
  • Once yellow rice is cooked, add peas and corn.
  • Add shredded cheese and stir until melted.
  • Plate 1 cup of rice and two chicken legs per plate.

    I am in a chicken rut! This flavorful chicken and rice looks like the perfect recipe to add to our menu!
