I use to think that my husband needed steak and potatoes to survive. haha. After many of years of pestering him  encouraging him to try new foods over the years I learn that he could indeed survive on other things. 😉

Bread on the other hand, I think it might be what keeps him going haha. He’s my carb, bread loving hubby and I wouldn’t change him for the world.

Yes, I 100% love bread too but he loves it even more than I do. Let me tell y’all something, this man eats bread as a snack. A SNACK. haha.

It’s not unusual to see him sit down to watch a movie with a plate of slices of sourdough or a handful of rolls.  So can you just picture the excitement on his face when we came home from work the other day and a hot skillet of Bacon Cheese Nibbles were waiting for him.

I had to convince him that he should probably have something with the Bacon Cheese Nibbles for dinner, because he was perfectly fine with having them as entire meal.

Yeah, I know, let the boy eat right? haha 😉 Well he did and even I convinced him to save some to take to the guys at work the next day.

The review? THEY LOVED THEM.

So the base of these nibbles are thawed Rhodes Yeast Dinner Rolls that have been cut up a bit. You can find the Rhodes Yeast Dinner Rolls in the freezer section; I found these at Walmart so I know if our little town has them that yours probably does too. 

You’ll want to use about 20 or so rolls for this recipe. After cutting each roll cut into three pieces just roll them in melted butter before smothering them in bacon and cheddar cheese.

Now let me 100% honest with you, You’re going to cut these little rolls into thirds and you’re going to think to yourself, “wow, these are super tiny pieces, there is no way this is going to be enough”.

Don’t fret! Once you top these little rolls with the cheese and bacon you’re going to want to cover them in plastic wrap and sit them in a warm spot to rise.

They’ll probably double in size in about 30 minutes to an hour or so.

But then still, you might think that they’ve gotten bigger but will it be enough?

YES IT WILL BE haha.

Once these little bites bake in the oven they are going to transform into huge fluffy bites of rolls! Oh you’re going to love them.

Pull them apart, dip them in ranch or just eat it as is!

Perfect, snack, appetizer or game day treat!

Bacon Cheese Nibbles

Bacon Cheese Nibbles Fluffy bites covered in melted cheese and crispy bacon! Perfect for dipping into ranch or your favorite dipping sauce!

  • Prep Time: 15m
  • Cook Time: 25m
  • Yield: 20

Ingredients

  • 20 Rhodes Yeast Dinner Rolls, thawed but still cold
  • 1/4 cup butter or margarine, melted
  • 6 pieces bacon, fried and crumbled
  • 2 cups grated cheddar cheese

Instructions

  • Pour butter in a 9x13-inch pan or 12-inch deep dish pizza pan. Cut each roll into 3 pieces; roll the pieces in the butter and arrange evenly in pan.
  • Sprinkle crumbled bacon over the rolls. Top with grated cheese. Cover with sprayed plastic wrap. Let rise until double in size.
  • Remove wrap. Bake at 350ºF 20-25 minutes.
