My weekend totally slipped away from me. I didn’t feel well Thursday night on into Friday so most of that’s a blur. Saturday morning was the first day of our city’s winter farmer’s market! I’m so excited that they decided to open the farmer’s market during the winter.

I strolled across the street and checked out a few of the vendors. I didn’t go with anything on my list but I ended up leaving with homemade sourdough bread, cheesy bread, homemade hot sauce, fresh dill and a few other small items. There isn’t a lot of produce at our winter market but there were some collard greens, turnips and sweet potatoes stacked in baskets and ready to go. Most of the tables that were set up were piled high with homemade breads with cookies and cakes to go with them. There were a few tables with jars of honey and one with fresh eggs and meats.

After an hour or so over at the market, I walked back to the apartment and I worked on a few things around the house while I waited for Thomas to get off work. After that we headed over to my grandmother’s house to start packing up her belongings.

 

My brother and his future wife are planning on moving into our grandmother’s house (she’ passed away last year) but there is still a lot of work that needs to be done before they can move in. However, before that can happen we have to get everything packed up.

So, we spent Saturday and all day Sunday packing up things at her house, folding bubble wrap around ceramic items that she created and separating bowls and plates into cardboard boxes.

Those two days were long and we were all aching and hurting by the time we got the boxes and trucks unloaded but we managed to get most of the house done.

Then yesterday, Thomas and I drove up to Salem for a little trip to the Veteran’s hospital. Thomas was in the military and ever since then he’s had awful back pain. Well, he was able to sign up to try the Battlefield Acupuncture and his appointment was today!

The told us that he may or may not help his pain but that it was worth a try.

During his appointment today, he had a procedure to have 5 tiny little gold pins added to the inside of each ear. His pain went down from like a 6 to a 2 in a matter of minutes.  Now, we don’t know how long that will last but I’m just glad that he got a little bit of relief!

Haha just thought I’d give y’all a little update on what’s been going on around here!

But onto these Banana Nut Silver Dollar Pancakes! This month’s #12 blogger theme is pancakes and banana pancakes are on the top of my list when it comes to pancakes. Oh and well everything is better when it’s in “mini style” so silver dollar pancakes had to happen!

 

 

Oh and let me tell you, when it comes to these pancakes, don’t rush them. You don’t want burnt pancakes. We’re looking for light brown and fluffy pancakes, not burnt Frisbee discs.

Also, I don’t use any butter when I’m cooking these. Thomas loves to use butter when he cooks pancakes and they get this little burnt design on them and they don’t brown evenly. He also likes to cook them on like medium high heat. haha

I like to cook these somewhat slowly on low to medium heat. We have different styles but this is how I cook Banana Nut Silver Dollar Pancakes. You can totally cook these pancakes however you’d like. 🙂

 

Banana Nut Silver Dollar Pancakes

Easy to whisk together and make for the perfect weekend breakfast!

  • Prep Time: 5m
  • Cook Time: 20m
  • Total Time: 25m
  • Yield: Makes about 65 mini Silver Dollar Pancake
  • Category: Breakfast

Ingredients

  • 2 cups flour (all purpose)
  • 5 tablespoons baking powder
  • 2 tablespoons sugar
  • 1 egg
  • 1/2 cup vegetable oil
  • 2 cups milk
  • 2 ripe bananas, mashed
  • 1/2 cup chopped walnutsMaple Syrup

Instructions

  • In a large bowl, whisk together the flour, baking soda and sugar.In another bowl, whisk together the egg, oil and milk.
  • Stir the wet ingredients into the dry ingredients.
  • Stir in the mashed banana and chopped walnuts.
  • Heat a skillet on medium heat.
  • For the Silver Dollar pancakes, use a bout 1/4 of an ounce of batter. Pour 1/4 oz batter into pan and let cook for 60 seconds. The edges will start to bubble and loose their shine.
  • This is when you'll want to flip the pancake. Let this 2nd side cook for 45-60 seconds.
  • Flip the pancake onto a plate.
  • Start making the rest.
  • Start with one at a time and one you get comfortable with judging when they\'re done work on cooking 2-4 at a time.
  • Serve warm with syrup.
  • Print
