Cookie Cake

A cookie cake is my number 1 choice for my birthday cakes and for any kinda of party cake for myself. I love them.

We use to have an American Cookie Company here. I remember going to the mall when I was little and gazing into the cookie cases and trying to decide on the perfect cookie.

When My best friend was pregnant with her first, she craved cookie cake…with EXTRA chocolate icing. I use to get them for her all the time by the slice.

So when they closed, I was pretty sad about it. But hey… its a cookie cake, how hard can it be to make one?

Not at all hard.

We made one for my brother graduations party this past weekend 🙂

Yes, my brother’s name is Adam, But his cake says Twinkle-Toes lol

Something to do with a personal joke between him and his girlfriend and their friends, so the girl that helped decorate the cake, asked if she could put that instead of Adam and we said sure lol.

 

What you need:
3 rolls of chocolate chip cookie dough
1 circle pan (I used a stoneware sheet)
Chocolate Icing
Vanilla Icing
What to do:
Preheat your oven to 350F.
Remove all cookie dough from packages and press them all together to make one huge ball of cookie dough.
Place this in the center of your round cookie sheet and press it into a disc.
If you’re using a round cookie sheet with no edges you will need to place a larger baking sheet under your cookie cake in the oven because it may (as in mine did!) spill over the sides.
Bake cookie cake at 350F for about 20 minutes or until the cookie cake is brown but not burnt on the top. The inside/side may still look a little gooey but once it cools outside of the oven they will firm up.
Once cooked, remove your cookie from the oven and let it cool completely.
When your cookie is cooled completely use a slightly smaller circle object (a circle piece of cardboard,  we used an upside down punch bowl) to carve around to make your circle cookie cake.
Brush off excess cookie from the board, and decorate as desired.
We used Chocolate and Vanilla icing to draw a graduation hat and white on the cookies cake.
We placed the icing into plastic squeeze bottles to decorate but you could using a piping bag and icing tip.
