Corn and Rice Tacos are one of the meals that my husband, Thomas, started making years ago. It’s become a family favorite and it’s one of our go to recipes when we don’t know what to make for dinner.
This filling is great for hard taco shells or soft shells! Plus this recipe only takes about 30 minutes to make so it’s perfect for overworked parents, college kids or anyone that just wants a super fast dinner.
WHAT YOU’LL NEED TO MAKE Corn and Rice Tacos:
- Ground Beef
- Taco Seasoning Packet
- Sweet Corn
- Yellow Rice (we use Goya)
- Shredded Cheese
- Taco Shells
How to make Corn and Rice Tacos:
Brown the beef in a skillet and drain grease.
To the brown beef in the skillet, add taco seasoning and sweet corn.
Stir until well combined. Let Simmer for about 5 minutes.
Prepare Rice according to package. Once rice is cooked add it to the beef and corn mixture. Sprinkle with about 1/2 cup of shredded cheese and mix well. Let simmer until cheese melts.
Spoon into taco shells.
These are great with a side of homemade Mexican rice!
