Do you know what I’ve never understood. I’ve never understood why people think that you have to have children to be considered a family.  Thomas and I have been married for 10 years this year and he’s my family. We make up a family, the Barrett family. Even though we don’t have any little ones yet, I still think of him as my family and he thinks of me as the same.

Somewhere down the road someone decided that a family consisted of two parents and kids.

But oh a family can be so much more or much less than that. With that being said, I think it’s important to have family dinner time together, no matter how your family is made up!

What does that have to do with chicken and rice? Well it’s got to do with the fact that even though Thomas and I don’t have kids, we still rely on family time and family dinners to reconnect. It might just be the two of us, but I’ve told y’all time and time again that dinner time is so important to us.

Even though it’s just the two of us, it’s the most important time of the day.

Not only do we enjoy eating dinner together but most nights you can find us cooking together in the kitchen. From elaborate celebratory meals to simple, quick dinners, we love planning them out, creating them in the kitchen and sitting down to enjoy them together.

This Creamy Confetti Corn and Rice and Barber Foods Broccoli & Cheese Stuffed Chicken meal is one of those super easy, quick meals that we put together for a weeknight dinner.

Like I’ve said before, we both work and we’re both tired when it comes to dinner most nights. So meals like this are exactly what we need. If it takes an hour or less to make, we’re in love.

I mean, it kind of beats having cereal for dinner 3 nights in a row because we’re too tired to make a big dinner. 😉

So as normal, Thomas and I both needed to go to the grocery store the other night to restock some of our groceries and to grab a few things on the menu plan. So before heading home from work, we met up at Walmart to grab a few things on our lists.

Yes, we totally met up to go to the grocery store sometimes before going home.  That way I can get what I need, he can get what he needs and neither of us has to remember a list of what the other one needed or wanted. Plus, it’s just extra time we get to spend together. haha.

So after a little while in Walmart we had everything on our list plus everything we needed to make this Creamy Confetti Corn and Rice and Barber Foods Broccoli & Cheese Stuffed Chicken for dinner.

After a quick trip home and an hour later, dinner was ready!

Now I don’t know about you but I’ve been a huge fan of  Broccoli & Cheese since I was a little kid. I remember my parents use to cover my steamed broccoli in melted cheese so that I would eat it and I’ve loved it ever since.

Also, y’all know that I could probably eat chicken everyday!

Creamy Confetti Corn and Rice and Barber Foods Broccoli & Cheese Stuffed Chicken

Creamy Confetti Corn and Rice and Barber Foods Broccoli & Cheese Dinner doesn't have to be a long drawn out process that take hours and hours to create. Pop these Barber Foods Broccoli & Cheese Chicken breast into the oven while you make this Creamy Confetti Corn and Rice! Dinner will be ready in under an hour!

  • Prep Time: 10m
  • Cook Time: 50m
  • Total Time: 1h
  • Serves: 4

Ingredients

  • 4 frozen Barber Foods Broccoli & Cheese Stuffed Chicken Breasts
  • 1/2 cup crumbled bacon
  • 3 cups cooked wild rice
  • 2 cups green peas, canned or frozen
  • 2 cups corn kernels, canned or frozen
  • 2 teaspoons seasoning salt
  • 1 teaspoon garlic powder
  • 1 cup milk
  • 8 ounces cream cheese, softened
  • 1 1/2 cups shredded Parmesan cheese

Instructions

  • Preheat oven to 375F.
  • Remove chicken from the pouches.
  • Cook chicken at 375 degrees for 50 minutes.
  • With 30 minutes remaining on the timer, start on the side dish.
  • In a large pot, melted the cream cheese on medium heat until smooth.
  • Add in the milk and stir to combine.
  • Stir in the garlic powder and seasoning salt.
  • Add in the corn, peas and rice. Stir well.
  • Stir in the 1 cup of shredded Parmesan cheese and the 1/2 the bacon
  • Pour corn and rice mixture into a casserole dish.
  • Top with the rest of the shredded and bacon bits.
  • Add the dish to the oven and bake for 15 minutes.

    I hear you – family time is important NO MATTER what your family looks like! Also, why do people have to put so much pressure on other peoples lives? It’s so insane and inconsiderate. Maybe you aren’t ready to have kids, maybe you can’t have kids, maybe you are trying and it’s hard, maybe you don’t want to have kids, all of it – really is nobody else’s business!

    I love that you and your husband have family dinners to reconnect! It’s so important, whether or not you have kids, to enjoy spending time with your spouse. My husband and I just love cooking together, and I have a feeling we’d love to gobble down this dish!
