Cook an entire seasoned chicken in the slow cooker and have this Easy Crock Pot Chicken ready for dinner in just a few hours.

Tell me the truth! Do you use your slow cooker more during the winter or are you the kind of person that uses it all throughout the year? I would have to say that I’m a mixture of both. There is just something so comforting in the winter about having a slow cooker going with soup or hot chocolate but I also love to use it in the summer for things like this Crock Pot Chicken!

I know that most people only use their slow cookers in the winter, but hello….summer is the perfect time to use them! I mean, really….how many of you want to heat your house up for roasted chicken in the middle of the summer? July Mid Summer Heat and a chicken roasting in the oven? Hum…. I don’t know many people that would get excited about that.

Roasted chicken in the slow cooker though? Um, yes please! That slow cooker isn’t going to heat your house up, y’all! Well, if it does then we need to talk to you about getting a different slow cooker haha.

A slow cooker, a whole chicken, some spices….. that’s really all you need to make this. Oh and you might want to make sure that you have some aluminum foil on hand.

You don’t have to use it but when I cook chicken in the slow cooker I like to have something under to keep it from just sitting in the juices as it cooks.

Sometimes I use little red potatoes and carrots, sometimes I use celery and sweet potatoes and then sometimes I just use a few sheets of aluminum foil rolled up into balls.

You just toss them in there and then place your seasoned chicken on top of them. 🙂

Here is a little side note, like some ovens, some crockpots and slower cookers might cook a tad bit different then others. I cook this chicken on high for 4 hours or until the chicken is done. Chicken is done when it reaches 165° F. Don’t overcook this or you’ll have dry chicken, so make sure to start checking it somewhere between 3:30 hours and 4 hours 🙂

Also, guess what!!!!! My Nashville trip is almost here! I can’t wait! This time next week I’ll be in Nashville, TN with my future sister in law and her BFF Brittany ….hopefully having a blast! haha

Easy Crock Pot Chicken Cook an entire seasoned chicken in the slow cooker and have this Easy Crock Pot Chicken ready for dinner in just a few hours.

  • Prep Time: 15m
  • Cook Time: 4h
  • Total Time: 4h 15m
  • Yield: 1 Whole Chicken

Ingredients

  • 1 whole chicken
  • ½ teaspoon dried basil
  • ½ tablespoon herb de provence (optional)
  • ½ tablespoon GREEK seasoning (salt free)
  • ½ tablespoon Italian Seasoning
  • 1 teaspoon seasoning salt (soul food seasoning)
  • 1 teaspoon medium/mild chili powder
  • Aluminum Foil

Instructions

  • In a small bowl, combine all of the spices and stir.
  • Rinse whole chicken and pat dry.
  • Sprinkle and rub spice mixture all over entire chicken.
  • Make a few Aluminum Foil balls and place into the bottom of a slow cooker.
  • (I’ve used a 6-quart slow cooker and an 8-quart slow cooker for this chicken)
  • Place chicken on top of Aluminum Foil balls.
  • Cook on high for 4 hours or until chicken is done. Chicken is done when it reaches 165° F. Don’t overcook this or you’ll have dry chicken.

    I use a similar recipe but without the aluminum foil balls. Why waste the drippings? Instead I make a bed of onions, celery and carrots then they can be used for making a broth. Yummy!

      My husband is allergic to onions so that’s why I don’t use them. When I made this I was using the chicken for something else so I didn’t have any celery or carrots and was just showing the method that you can make it without vegetables. (Normally because I’m making it to freeze shredded chicken for other meals) Soooooo you can use vegetables or you can use foil. I use foil because that’s how I make it.
