If you remember a few weeks ago that I professed my love of Ferrero Rocher chocolates when I made those Ferrero Rocher Cupcakes , it should be no surprise to you that these Ferrero Rocher Cookies are appearing on the blog!
I love Ferrero Rocher candy and these cookies are the perfect baked version of them. These cookies take all of those great flavors of the Ferrero Rocher chocolates and smash them into one awesome bakery style treat.

Ingredients For Ferrero Rocher Cookies:
- white sugar
- light brown sugar
- egg
- vanilla extract
- all-purpose flour
- cocoa powder
- baking soda
- salt
- toasted hazelnuts, roughly chopped
- mini chocolate chips

How To Make Homemade Ferrero Rocher Cookies:

Preheat the oven and line a baking sheet with parchment paper.

In the bowl of an electric mixer, cream together butter and both sugars.

Add egg and vanilla. Mix well.

In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.

With the mixer on low, slowly add the flour mixture to the batter. Mix until just combined.

Set aside 2 tablespoons chopped hazelnuts and 2 tablespoons mini chocolate chips.

Stir the remaining hazelnuts and mini chocolate chips into the dough.

Drop by rounded tablespoons onto a baking sheet.

Press remaining hazelnuts and mini chocolate chips into tops of cookie dough balls.

Bake at 350 F for 12 minutes.

Remove and let cool for 5 minutes and then move to cooling rack to completely cool.
Why aren’t there any Ferrero Rocher Chocolates in these Ferrero Rocher Cookies? Can I add some?
I personally have never had good luck with baking Ferrero Rocher Chocolates into baked goods.
I’ve tried to bake them into cupcakes and cookies only for the Ferrero Rocher pieces to come out over cooked and chewy…and not a good chewy.
If you want to experiment with baking crushed Ferrero Rocher into cookies, you certainly can add some to this recipe but as for the way this recipe is written now, it just uses the flavor combination of the chocolate and hazelnut from the Ferrero Rocher chocolates.

Where can I find hazelnuts to make these cookies?
I can normally find hazelnuts at Target, Walmart and Kroger around here and I bet they are a lot of other grocery stores as well. I bought these toasted hazelnuts from Trader Joes.
Can I use regular-sized chocolate chips instead of the mini chocolate chips?
You sure can! I just like the look of the mini chocolate chips but the regular size will work too.
A Tip on getting the picture-perfect cookie:
If you’re anything like me you want the cookies you bake to not only taste good but look amazing as well. Once you plop that dough onto the cookie sheet, make sure to take some extra chocolate chips and chopped hazelnut pieces and stick them into the top of the cookie dough before they go into the oven! That’s how you get the little details like the chocolate chips and hazelnut pieces showing on top of the cookie after it bakes up.

Ingredients
- 10 tablespoons unsalted butter, softened
- 1/2 cup white sugar
- 1/2 cups light brown sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup toasted hazelnuts, roughly chopped
- 1/2 cup mini chocolate chips
Instructions

Macadamia nuts are pretty close to them if you can have those.
