I’m still on the right track! I’ve got a goal and I’m going to reach it! I’ve been off and on with starting this “healthy lifestyle” for a few months, but one thing that I can do now is pick myself up when I fall off the wagon and keep going!
I really want to get back to my “Wedding Day Weight”. I felt beautiful on my wedding day, and thankfully was at my perfect weight. I wish I hadn’t taken it all for granted and actually paid attention when I started to put on the pounds. I could have taken action and fixed the problem right away but I didn’t. I was depressed and lazy when I moved to the military base with my new husband (almost 7 years ago) and just slipped into a black hole.  (Not depressed because of being married, depressed from moving 4 hours away from everything I knew and everyone I knew haha)
My other goals include running a 5K (one day!!) and of course just being healthier. These are really my top goals, but I have a feeling the weight loss will come along with these two goals.
My friend Anne has been a great support for me in my search for healthy foods and recipes. Anne lives in Hawaii now and is always cooking with fresh ingredients! Not to mention the Hawaiian/Asian style of the islands influences her food a great deal so she’s always cranking out some serious flavor!

She gives me advice on things that I should eat and things that I should avoid. She’s also opened her home to Big Bear and I for a little vacation next year in Hawaii for our anniversary! I am beyond excited! That’s another motivation for me! While I doubt I’ll be at my wedding day weight by then, I hope to be close to it. So we will see.
Along with Anne’s helpful advice, I have also been getting some great advice from Liz (The Lemon Bowl) and I’ve been switching brands and being more mindful of the ingredients on labels. I’m a lot more mindful about what I’m putting into my body. I can certainly tell that I gravitate towards the vegetables and meats way more now than the cookies and crackers.
In speaking of meats and protein, I’m sure it’s no surprise that I’m a big chicken eater. I could literally eat chicken every day and not be tired of it. But even though I can eat chicken everyday, I do need to change up the chicken recipe now and then. As in I can’t just eat a grilled chicken breast everyday and be ok with that. I need flavor! However I actually find it difficult to find chicken recipes that aren’t covered in sauce or in fat. Until I got some help from Anne that is!

So, with such wonderful, “good for you chicken” I knew that I needed a recipe that would help this chicken shine and a recipe that would also be healthy and keep my on the right track.

Anne was so gracious in telling how she makes her Hawaiian Style Green Curry Chicken at home. I only tweaked it a tiny bit, and wow, just “wow” is really what I have to say about this recipe! It’s so flavorful and it isn’t packed full of butter or fat! It is just the kind of recipe that I need!This Hawaiian Style Green Curry Chicken comes together in about 30 minutes as well, so while I’ve enjoyed it on the weekend, it’s just as quick to whip up after work!

For a Weeknight dinner, I would through together a quick Spinach and Almond Salad, have this Hawaiian Style Green Curry Chicken as my main dish and probably finish the evening off with a fresh fruit with a honey drizzle.

Hawaiian Style Green Curry Chicken Recipe

  • Serves: 6

Ingredients

  • 4 boneless skinless Chicken Breast, cubed 
  • 1 -2 tablespoons green curry paste -green curry paste is hot so adjust to your taste
  • 1 teaspoon red pepper flakes 
  • 2 teaspoons garlic powder 
  • 2 pieces of fresh lemon grass (don\'t eat this! Just use it for flavor, remove before eating)
  • 1 cup mushrooms slices 
  • 1 can unsweetened coconut milk 
  • 2 cups sugar snap peas 
  • 3 carrots, sliced 
  • 1 can un-drained pineapple chunks 
  • 1 bag yellow saffron rice, prepared according to package directions

Instructions

  • In a large pot, heat about 1/4 cup of the pineapple juice. Add the carrots and saute until tender. 
  • Add in the chicken and cook until chicken is almost done. Add in the snap peas, mushrooms, pineapple slices with juice and lemon grass. Stir. 
  • Pour in the coconut milk. Stir to combine. Simmer for about 5 minutes or until the chicken is done. Add in the curry paste, garlic and red pepper flakes. Stir to combine. Simmer for about 5-10 minutes. 
  • Spoon over prepared saffron rice.
  • Print
